22.01.2022 On hot days like this it reminds me of one of my childhood faves.....HOKEY POKEY ice cream! Whats not to like right? Hokey Pokey is coined as New Zealand's most popular flavour but I'm sure that's up for debate (Goody Goody Gum Drop is pretty up there too) ... We found this quick and easy recipe you can whip up at home. Ingredients - 1 cup of Vanilla Ice Cream - 5 tablespoons of White Sugar - 2 tablespoons Golden Syrup - 1 Tsp Baking Soda Steps Gather the ingredients. Line a baking tray with baking paper. Set aside Heat the 5 tablespoons of sugar and 2 tablespoons golden syrup or light corn syrup in a small saucepan over medium heat. Melt the mixture and stir occasionally. Bring to a boil for 5 or 6 minutesmake sure you stir continuously so the syrup doesn't burn. Take the pot off the stove and stir in the baking soda. The mixture will froth up and become pale. Use a spatula to scrape and pour the mixture onto the baking paper. Allow the hokey pokey to set for 30 minutes. Once set, wrap the honeycomb loosely in baking paper and use a rolling pin (or whatever you can find) to break it into small pieces. Scoop ice cream into two serving bowls and sprinkle with hokey pokey honeycomb. Serve immediately. Enjoy! Let us know your favourite ice cream flavour!
