20.01.2022 Todays lunchbox prep!

12.01.2022 I made the famous tictok #fetapasta for our lunch today. This was so easy to make and so delicious! I used 2 punnets of cherry tomatoes, 1 block of Greek feta, 1 tablespoon of Italian herbs, teaspoon of chilli flakes and a whole head of garlic, peeled but left whole. Put everything except the feta into a shallow baking dish and add a couple tablespoons of olive oil until the tomatoes are coated. Then season with salt and pepper. Place the feta block on the centre and tur...n it over a couple times so it's covered in the herb/oil mixture. Roast uncovered in the oven for around 25 minutes on 200. Meanwhile cook your pasta, and drain but reserve half a cup of pasta cooking water. When the tomatoes are cooked, mash them with a fork then mix through the hot pasta. Ensure that all the pasta is covered with the creamy mixture. Add the pasta water to loosen the mixture if needed. I also tore up some basil leaves and stirred them through at this point. 08.01.2022 Spaghetti and meatballs was our dinner tonight! Such a good meal that guarentees everyone to finish their plate, unfortunately I forget about it and don't make it often enough! My meatball mix consists of 500g pork mince, 1 egg, salt, pepper, 1 teaspoon garlic powder, 1 teaspoon sage powder, teaspoon onion flakes. Also I like to soak 2 crustless slices of bread torn up and soaked in milk. Let it sit for a few minutes then very lightly squeeze out the excess milk and add... it to the rest of the ingredients. Get in there with your hands and give it all a really good mix. Roll out into meatballs if your desired size. Make a simple tomato sauce, (onion garlic, mushroom for us, bottle of passata, salt, pepper) then once it begins to simmer drop in the meatballs and cover. Let them cook covered for about 10 minutes then very gently stir to roll them over. Cook on a very low temp for another 20 minutes or so until cooked through them serve with spaghetti and enjoy!
