JJ, but true it doesn’t have to be all or nothing. Low carb is a lifestyle which rewards your body in so many ways but it is still possible to indulge once a while and get the benifits, just be conscious of portion sizemore veg!! So good it makes you wanna go all silly like my papa on the trampoline check out my insta to see the video Just saute off a load of veggies, garlic and red onion in EVOO then add chopped tomato and a spoon of tomato paste, lots of herbs and crack the eggs on top. into the pre heated oven with the HOT pan till eggs look ready. Grill if needed. Careful of the handle pulling out load Goats fetta is a great addition. And hot sauce if you like oh and more herbs!!

What more could we want in a winter lunch for one? I use a good quality store bought paste to keep the prep time quick and it’s soooo delish. 14.01.2022 Cannot get enough of these little blocks of heaven. Low sugar alternative to a store bought chocolate to have with your cuppa or after dinner. 06.01.2022 Quicky chicky Asian soup// takes 15 mins! craving this all day and so satisfying to sit down and eat it ate the whole bowl in a big hurryRecipe uses short cuts but if you have the time your own bone broth would be amazing 1lt real chix stock 2 cinnamon sticks Knob of sliced ginger... 3 cloves smashed garlic 1 Tbs soy 1Tbs oyster sauce 1Tbs Chinese cooking wine 1 tsp castor sugar 1 tsp sesame oil Handful dried porcini 1 fresh red chilli de seeded and sliced Simmer all the above ingredients in a pan for ten mins, turn off, Then add 1 cup matchstick pumpkin While this is happening prepare egg or rice noodles (if using) otherwise for low carb option, spiral use zucchini and finely shedded cabbage To serve: Noodles Pak Choy Shedded rotisserie chicken Herbs (corri, Basil) Sprin onion & fried shallots Drain noodles (or zoodles) and put handful in BIG serving bowl, then top with chicken sliced pak or bok Choy, and spring onions Fish out porcini mushies and slice the put back in pan. Discard garlic and cinnamon sticks.
