From her days as a section waiter at Rockpool on George, to working in the bar and managing the front desk at Rockpool Bar & Grill, and joining Spice Temple as Reservation Manager in 2017, before moving up to Assistant Manager, then General Manager in December 2018, Jamie has tracked an exciting course of career progre...ssion. Jamie loves working with a smaller team. We’re like a family, she says. And she is constantly enthralled by the menu: its unique style, spices and the cooking techniques required. The menu and team inspire me all the time, she says. Spice Temple Executive Chef Andy Evans says Jamie has worked very hard to get where is today. Jamie is never afraid to dive in and assist where help is needed. She is also the first to offer her services for events that may seem like quite the hurdle for your average manager. He’s particularly proud of our range of micro-produced namazakes (unpasteurised sakes), which he says are currently showing great intensity and length. He recently received a new batch of Hanabusa Junmai Daiginjo Muroka Nama Genshu, which is... made by Moriki Shuz from Yamada Nishiki rice that is grown organically and polished to 50% to create a refined sake. Hanabusa displays lifted aromas of white stone fruits, aniseed, almond meal and fresh apple with a palate that provides freshness, concentration, structure and balance, followed by a long, pleasant aftertaste. 09.01.2022 Our Area Chef for the ACT, Edgar Arcita, is looking forward to celebrating The Bavarian Belconnen’s first anniversary today with the team. Edgar was Head Chef at the launch, and also headed the kitchen of The Bavarian Woden when it opened in April 2019. In addition, he was Head Chef and a member of the launch crews for The Bavarian Penrith and The Bavarian Coomera. It’s fabulous career progression for Edgar, who commenced with the group as Chef de Partie at The Bavarian Miranda when it opened five years ago. Edgar, you’re a true legend!

06.01.2022 After a five-month hiatus, Rockpool Bar & Grill Perth is reopening tomorrow, Friday 14th August, after withstanding the double setback of a kitchen fire and the Covid-19 hospitality sector shutdown. The reopening brings a team of 60 team members back to work, including Frenchman Ludovic Mulot who assumed the Head Chef role in November 2019, after a nine-year tenure at Rockpool Bar & Grill Perth and 11 years with the Group which makes him a true Rockpool Legend! Chef Ludovic says he is delighted at the prospect of welcoming guests back. And we are delighted at the prospect of having Chef Ludovic and his BOH team, and FOH led by Andrew Symes, back in action. 05.01.2022 Celine Tran has earned her stripes and Rockpool Legend status during an eight-year tenure with Rockpool Dining Group. Celine’s career progression has been a consistent climb and a labour of love and dedication. She has risen through the ranks from Assistant Restaurant Manager at Saké Eagle Street Pier in Brisbane, to Restaurant Manager at Saké The Rocks in Sydney, then Food & Beverage Director for the Saké fleet of six restaurants. Celine is currently Food & Beverage Dir...ector for the Saké and Spice Temple brands nationally. From her home base of Sydney, Celine was dispatched to Melbourne in early December last year, to oversee the reopening of the Saké and Spice Temple brands and the ensuing festive season - both of them huge jobs. She is still there, though we are hoping to see her sunny smile in Sydney again next week! We love your work, Celine!

03.01.2022 October is World Pizza Month, which makes Fratelli Fresh Head Pizzaiolo William Baffoni a rightful Rockpool Legend. William started making pizza in his hometown of Porto Sant’Elpidio in central Italy at the age of 13. After leaving school, he went on to work in London for eight years before making his way to Sydney six years ago, and to Fratelli Fresh four years ago. After years of experimenting with sourdough-making techniques, William has created his own individual style of... Neapolitan pizza at Fratelli. The fermented sourdough process is what differentiates Fratelli Fresh pizzas: we use our own natural fermentation, William explains. William says the best way to judge a pizza is by its crust. The crust never lies. It tells if the fermentation, to create sourdough, has been done properly. William prefers to eat his pizza with San Marzano tomato sauce, Buffalo Mozzarella, fresh basil and extra virgin olive oil. The combination of a Neopolitan-style base and Margherita toppings are the components of a perfect pizza, he says.
