24.01.2022 Ive been selfishly keeping this restaurant a secret because it was already hard enough to get into but without a doubt, after 20 years of travelling to Japan, some of the finest Japanese food I have ever had. Yesterday was... a pretty cool day spent with @benydev of @pipitrestaurant. Inspired by the work of UK Potter Ian Gregory, we had a wild idea to build a gas kiln out of a shopping trolley . After I nearly blew my face off firing oily, salty sea creatures in an electric kiln, it has taken me this long to manage the PTSD and tackle it again. These are @rockypointaquaculture kitchen waste/spent fish bone vertebrae from the kitchen at @pipitrestaurant and discarded pipi shells, harvested from our friends at @curriecountry. I have failed with this project more times than I would like to admit, but grit has always been about perseverance & passion for long term goals. I love working with innovative humans that are willing to push the boundaries of creativity, and the team right across the street at Pipit are my kind of gritters. These samples will be processed down and transformed into tableware for the restaurant, taking the life cycles of every part of the dining experience full circle. I hope to be able to share some successful results soon - pardon me while I take the time to stare into the miracle of life in front of me. Just look at how beautiful & mysterious the central channel of a living being is!! There is so much more to this human condition than we will ever comprehend. Go deeper... I finally feel like we are on the right track this time. 10.01.2022 Over the Easter weekend we had our own delivery of eggs-3 million cobia babies to be precise! The ruckus in the breeding tank was apparently akin to nightclub behaviour where males and females let each other know they are ready for action!!. First shot 4 hours old eggs, 2nd shot newborn eggs- these will be ready for restaurant plates April next year when the world will hopefully have returned to health. This is a huge milestone for our little farm- it means we now breed our own breeders and will only need to occasionally go to the ocean for a few new animals in order to maintain genetic diversity. Its hard for many of us to think beyond the next few weeks at this uncertain time-please keep safe and look out for each other and see you all on the other side of this! #sustainablefish #sustainablefarming #sustainablefoodsystems

03.01.2022 Traditional cooking lesson in Samoa- everything is made from scratch including grating and milking 25 coconuts to catching our own fish. New favourite dishes include taro leaves in coconut milk and fresh mackerel baked in banana leaves on the coals. Every part of each plant is used- tongs are made from the stems of the taro plant, plates are made from woven leaves.
