16.01.2022 Prawn Pizza Wednesday! INGREDIENTS 2 Tablespoons olive oil... 2 Tablespoons unsalted butter 3 large cloves fresh garlic minced 1/4 cup white wine 1 lemon zest and juice As many fresh Rolinda & Moonshine prawns peeled, deveined, and rinsed 1 pound fresh pizza dough 1 cup shredded mozzarella cheese 1/4 cup grated Parmesan cheese 3/4 teaspoon Italian seasoning INSTRUCTIONS Preheat your oven to 200 degrees Melt butter and olive oil in a skillet over medium high heat. Add garlic and cook until fragrant, stirring constantly, about 1 minute. Add wine, drink a little wine, oregano and lemon juice, stir to combine and simmer for 1 minute. Add prawns and cook just until turned pink. Remove prawns with a slotted spoon and place on a plate. Set aside. Remove pan with juices from burner and set aside. Bake CRUST ONLY for 4 minutes and remove from oven. Brush crust with sauce from pan (about 1/4 cup). Top with 1-1/2 cups of the cheese and evenly distribute prawns on top of cheese. Sprinkle the remaining 1/2 cup of cheese on top of pizza. Sprinkle evenly with Italian seasoning. Return to oven and bake for 6-8 minutes, or until cheese is melted and bubbly. Top with Parmesan cheese and fresh parsley, if desired. *Recipe by theblondcook.com

05.01.2022 One Pan Prawn Gnocchi Ingredients 2 tablespoon olive oil... 2 cups sliced mushrooms 1 small yellow onion chopped 3 cloves of garlic, minced 4 tablespoons butter cup white flour Salt and pepper teaspoon chili flakes 2 cups milk 1 cups chicken broth 16 ounce package of gnocchi As many Rolinda & Moonshine prawns as you desire, peeled and deveined 2 cups spinach cup parmesan cheese plus more for serving Fresh parsley, salt and pepper, and more Parmesan cheese to serve Instructions Preheat oven to 210 . Place a large oven-safe skillet with olive oil in it on the stove over medium-high heat. Add in the mushrooms and chopped onion and stir until the onion is transparent and mushrooms lightly browned or about 5 Add in the garlic, chili flakes if using and the prawns and stir for another couple of minutes until the prawns are pink and just about cooked through (dont over cook them because they will continue to cook later in the sauce) Remove to a small bowl or plate and quickly wipe out the skillet. Place the butter in the skillet and melt. And then lower the heat juts slightly. Gradually whisk in the flour until smooth, and continue cooking, whisking constantly for about 1-2 minutes. Very gradually whisk in the milk and chicken broth until the mixture is smooth whisking constantly until the mixture has thickened (about 5 minutes). Then whisk in half of the cheese Stir in the gnocchi, cooked mushrooms, prawns and onions mixture, and spinach. Stir until all is coated. Top with the rest of the Parmesan cheese and place in the oven. Bake on the top rack for approx 15 minutes until bubbling and thick. If you want a little colour on everything thing, turn on the broiler and then broil for another minute or two for a delicious crispy top. Remove from the heat, top with additional salt, pepper, chili flakes and some chopped fresh parsley if desired.
