07.01.2022 Last week, we featured a good ol’ fashioned Greek takeaway shop and highlighted how rare they are becoming, as the post World War II Greek migrants’ generations... are aging and passing away. If the Greek takeaway shop is becoming rare, then the local Greek butcher shop is even rarer! With the opening of the shopping centres and the supermarkets’ butcheries expanding, the ‘self-standing’ butcher shops, along shopping strips, have sadly disappeared. One Greek butcher shop that has survived all these changes yet continues to maintain its strong local presence is none other than Rosebery Meat Market. And its opening dates back to 1971! Over forty- five years of experience! Vasilis Vasilas recently interviewed Gianni Korkidas who still runs the shop with his son, Michael, which means the business is firmly in the good hands of the next generation to continue! The idea to open Rosebery Meat Market came from Arthur Korkidas; before all the renovations to the shop were completed, he asked his brother, Gianni, who was working as a real estate agent at the time, to come on board and he did. The two brothers worked together until very recently when Arthur retired. After finishing his long, successful rugby league career, Gianni’s son, Michael- yes, there was definitely a I’m not worthy moment for Vasilis during the interview- decided to follow his father’s and uncle’s footsteps to become a butcher. Gianni remembers the Greekness of the local area was captured by looking outside his shopfront window, ‘Every second house across the road from us was Greek. As 95% of our customers in the early days were Greek, you can only imagine what the festive season and Greek Easter was like for us. Our customers would be queuing outside the shop!’ So many things over the years have changed for butcheries! One interesting aspect Gianni pointed out was how even the Greeks have changed, ‘The older generation used to come in and buy whole legs of lamb and they would make their own souvlakia; these days, the younger generation ask for ready- made souvlakia. We cater for what our customers want, so we make dozens and dozensand dozens of lamb and pork souvlakia.’ Gianni admits he continues to work to keep busy and to help out his son, Michael; as he proudly states, ‘Michael has been with us for four years now; he is very keen and wants to learn.
