31.03.2022 Where’d I go? So, I’ve taken a little gap year on the other side of my degree. I’m sure lots of people who follow this page are aware how hard it is to land a stable job in the field of nutrition, and maybe I’m not alone in this ‘gap year’ I’m currently having working as a receptionist. However, my goals are burning in the back of my mind and I’m always working on my game plan to get back into this field where my dreams remain. So here’s a little update, I’ve enrolled myself into a PT course! As well as furthering my skill set I’m so stoked to get my little brain ticking again & be learning more about all the stuff I love!

24.03.2022 Frozen salted caramel & chocolate cups! Note- I don’t have a high speed blender so I just blitzed each ingredient separately & combined them in a bowl. I also had to add a dash of water to get the dates to form a paste in the middle layer, so I added some protein powder to thicken the mix! Base layer: ... Blend 1/2 cup macadamia nuts, around 15 ordinary dried dates (halve this if you’re using fancy pants medjool dates) & 1/4 cup desiccated coconut & press into mould. Place in the freezer while you make the next layer! Middle layer: Blend 1/2 cup macadamia nuts, around 20 ordinary dried dates, 1/3 cup maple syrup, 1 teaspoon of vanilla extract, 2 tablespoons of chocolate protein powder (optional) & a pinch of sea salt! Spoon this mixture onto the base, spread evenly & place in the freezer for at least an hour. Top layer: Mix 1/3 cup coconut oil, 3 tablespoons of maple syrup & 1/3 cup of cocoa! Create a third layer with this chocolate mixture & place back into the freezer to set! Leave overnight & enjoy the following day

20.03.2022 Morning walk & brekky Quick and easy breakfast: Throw a handful of berries into a saucepan, heat for a few minutes, stir into your cooked oats & bob is literally your uncle! ... Happy Wednesday

02.03.2022 My view on Nutrition First up, let’s get something straight... I’m not here to judge the way you currently live, or fix all the ‘bad’ things you’re doing. I’m here to educate & empower you to make simple swaps to increase your overall health & quality of life. ... These swaps could include soft drink for water, changing recipes to include more vegetables or choosing breads and cereals that contain more fibre. I’m all about making better choices where we are able to, but I’m also about enjoying food for all that it is! We sometimes forget that as well as nutrients and energy, food provides us with enjoyment, memories & pleasure. While I love creating nutritious meals & raising awareness of all the great benefits of meeting our daily nutrient requirements... I also love the shit out of donuts & having a beer with my friends.

10.02.2022 A simple question to start a conversation that could change a life Today we remind ourselves to check in with those closest to us and ask, are you okay? Not just today but every day! If you haven’t done so already, take the time today to ask one of your loved ones this question!

25.01.2022 Since finishing uni I have been a bit all over the place & completely out of routine. While trying to sort my life out and create a career for myself, my perfect little exercise routine has been lost along the way. Officially back on the band wagon today, kicking it off with a little 5km run! Also, how good’s the view! ... Already feeling 10x better after this! Keen for the week ahead. Do something today your future self will thank you for! Happy Monday legends

03.01.2022 Have been in the kitchen today & made some sweet potato brownies for this kick ass Friday (don’t screw your nose up when you read sweet potato, I promise they are delicious) Thank you Gabby Ward for the recipe! (Checkout her Instagram here for more great recipes:... https://instagram.com/_gabbywardnutrition) Make healthy swaps where you can- the addition of mashed sweet potato is super easy & such a great way to get some more veg into your day for both kids and adults! Also, ever wondered about the difference between cocoa & cacao? This article by The Nutrition Guru & the Chef perfectly aligns with my views on the topic, give it a read if you’ve got a spare 5 minutes! https://www.thenutritionguruandthechef.com//cacao-nutriti/ Ingredients: 1 cup of self raising flour (wholemeal if you’ve got it, otherwise white flour is fine) 1/4 cup cocoa/ cacao 2 eggs 1/4 cup melted coconut oil 1/4 cup maple syrup 1 cup milk or dark choc chips 1 cup of smooth mashed sweet potato 1 table spoon of tahini 2 table spoons of peanut butter to top! Place all ingredients in a bowl, mix & pour into a tray lined with baking paper. Cook at 160 degrees for 25 minutes, or until a skewer comes out clean! Thanks again Gabby for the recipe
