25.01.2022 Have a laugh - so precious!

23.01.2022 O.M.G! Satay Mas for dinner - so easy. 700g chicken breast 30g Chili and Lime Olive Oil 1 tblspn Satay Mas 1 cup peanuts... 2 tblspn peanut paste (optional) 1 can coconut cream - heat up the oil and spice blend, add chicken and cook 20mins to ensure cooked and flavours develop. Add peanuts, peanut paste and coconut cream at the end to generate the creamy sauce. Served with coconut rice and there was nothing left! Fussy family fed with request to make it again. Winning! 23.01.2022 Cheesy Potato Pancakes The potatoes are not cooked in advance but grated and squeezed well of any excess liquid. This step is really important to ensure getting delicious crispy pancakes on the outside. Makes about 15 pancakes 900g potatoes, peeled and grated 1/2 cup Cheddar cheese... 1/2 cup Parmesan cheese 3 spring onions, chopped 1/2 tsp Flavourista Thyme for Garlic Spice Blend 1/4 cup all-purpose flour 2 eggs, beaten 1/4 tsp Stockman's Whip salt Freshly ground black pepper 1/4 cup oil, for frying Dipping sauce 1/2 cup sour cream Flavourista Spice Blend of your choice Use the large holes of the grater to grate cheese and potatoes. Transfer the potatoes into a kitchen towel and squeeze as much liquid as you possibly can. Place the potatoes into a large bowl. Add cheeses, onion, garlic powder, flour, salt, pepper, and eggs. Stir to combine. Heat oil over medium-high heat. Use an ice cream scoop to take equal amounts of potato mixture and add to the pan. Use the back of a spoon to flatten the patties. Cook about 3 or 4 patties at a time. Cook until browned about 4 minutes per side. Repeat with the remaining potato mixture. Transfer the pancakes to a plate lined with paper towel to remove excess oil. Prepare the dipping sauce by mixing sour cream with Flavourista Spice Blend (I love Greek Out!). Serve the potato pancakes while still warm.
