Curry Bana's "Best Pepper Roti" Champions for 2018 has a unique "pizza style" approach to their roti, with the right amount of cheese, pepper and vegetables. Dianne Mangroo has certainly found the perfect recipe for the best pepper roti in Trinidad and Tobago. It had us satisfied with just one slice ! 23.01.2022 Trinidad Black Cake. 1 lb prunes, seeded and chopped 1 lb raisins 1 lb currants 1 lb sultans... 1/4 lb mixed peels 1/2 lb cherries chopped in half 1 1/2 cups cherry brandy 2 cups rum 2 cups or 1 lb butter 2 cups or 1 lb sugar ( brown or granulated) 10 large eggs 2 tsp.grated lime peel 2 tsp. vanilla extract 1 lb or 4 cups flour 4 tsp. Baking powder 2 tsp. ground cinnamon 1/4 cup browning or more 1 cup mixture of rum and cherry brandy Method 1. The day before of some days before baking I boil the fuits ( prunes, raisins, currants, sultans, mixed peels and cherries) in rum and cherry brandy. It's optional some people might prefer soaking the fruits.Blend some fruits. 2. Line cake pans with double layers of wax paper. 3. Cream butter and sugar until light and fluffy. 4. Beat eggs one at a time. I prefer blending the eggs in the blender.Pour in egss into the batter and add lime peel and vanilla. 5. Combine flour baking powder and cinnamon,fold into creamed mixture gradually. 6. Add fruits and enough browning to give desired colour. Stir well. I always put a Guinness when mixing the batter. U can always add a little more rum to ur desired taste. 7. Put in lined baking pans and bake in a preheated oven at 250F for first hour,reduce heat to 200F- 225F for the remaining 1 1/2 hours or until tester comes out clean. 8. Prick hot cakes and soak with a mixture of rum and cherry brandy.Cover and set aside to cool. Enjoy.

09.01.2022 When you make hussy's fav yum yum Dough : 4 cup flour 1 8 oz blue ban cut in cubes and frozen ... 1/2 or 4oz cooken cut in cubes and frozen 1 tsp salt 3/4 cup.ice water Add all dry ingredients to food processor and pulse until it looks like pea grains then add water to run until dough starts to come together. Turn over on flour dusted surface and squeeze together to form disk shape (do not knead!) Wrap in cling wrap and let chill for at lease 15 mins. ( i find the longer it sits tge better the end results are.) Freeze dough up to six months and thaw in frige or cool place when ready to use. Filling 1 cup raisins 1 1/2 cup currants 1 tbsp cinnamon 1/4 cup sugar Soften blue ban butter (as needed) Mix it all together Cup dough in half roll out. Rub soften butter all over dough Add filling all over, 1 inch away from ends. Roll up tightly and tuck in ends. I add some more butter on top and sprinkle with sugar but this is optional Bake 325 to 350 for 45mins and enjoy.

07.01.2022 Happy Sunday, lovely people! Divali is quickly approaching these Saheenas will be a lovely addition to your menu. This is made by creating layers of dasheen bus...h leaves, and pasting a spicy flour and dhal (split peas) filling between each layer. It is then rolled into a log and cut into 1/2 inch thick circles, pasted on both sides and deep-fried. 05.01.2022 Made some dhal puri Roti sometime back it was so soft .. Simple recipe . Recipe 3 cups all purpose flour 1 to 1 1/2 tsp baking powder... 4 oz shortening 1 to 1 1/4 cup water 1/2 tsp salt 1/2 cup oil 1 oz shortening or ghee to spread Sift flour and baking powder in a bowl. Combine shortening or ghee and flour( you can use a food processor, hand or knife). Add salt and water to mixture. Knead dough for 5 mins. Cover and allow to sit for half hour. Filling 2 cups yellow peas 4 cloves garlic, crushed 1/4 teaspoon saffron 1 tsp geera 1 tsp salt 1 cherry pepper (optional) Boil peas in a pot of water and add saffron powder for 15 mins. Drain. Add garlic,and pepper. Place in a food processor and chop until smooth (there should be no grains). Filling should be lose and not a paste. Add salt, geera to filling, mix well using a fork. Place dough on a well floured surface and cut into 8 pieces. Flatten a ball of dough and place 2 tbsp of filling in center. Pinch edges close. Repeat with all the pieces of dough. Cooking a tawa or griddle on medium heat. Roll out the dough into even rounds about 9 inches ensuring that the filling spreads evenly. Place on griddle or tawa. Spread oil, mixed with ghee or shortening. Allow to cook for 1 minute, turn over and brush with oil and shortening/ghee mixture. Flip again, allow to cook for about 30 seconds and remove from heat. Place wax paper between each dhal puri to prevent from sticking together.
