25.01.2022 How long does it take you to eat one croissant ? did you know a croissant takes usually 2days to be made? Making croissant is a labour of love, there is more than 80 layers folded, you need very good quality butter and the dough needs a lot of resting time to get to that puffy, crunchy, buttery goodness MiAM

My favourite dish is the crottin with the delicious prosciutto and for the dessert the Chamonix. -Whats your favourite thing to do during iso ? I come from a small village in the nord est of France, I lived in Strasbourg, Paris and Geneva and in Melbourne for 6 years now with my Aussie partner :) -What is your favourite dish at RGC ? My favourite galette is La Forestière, I could also eat La Complete every single day, just a great classic! When I feel like a real treat Ill make a crêpe with Biscoff, banana and whipped cream OMG -Whats your favourite thing to do during iso ? Spending the day in tracksuit haha and long walk in the botanical garden or enjoying coffee from my local café, taking the time really -Whats the first thing youll do when we get out of lockdown ? Most probably a girls night and then hop on a plane and visit my family in France -A little positive thing to say ? 2020 made us appreciate what really matter, the things we have instead of what we want, I hope we will all remember and grow from this LOVE FOR EVERYONE EVERYWHERE

I am coming from Tours, a medium city situated 2 hours away from Paris in the center of France. I decided to live in Melbourne to improve my English and to join my best friends who were already living in Melbourne. -What is your favourite dish at RGC ? My fav dish on the menu is the Terroir Galette. And obviously my daily Nutella crepe is a must and I will never be tired of it -Whats your favourite thing to do during iso ? During the lockdown I decided to practice yoga and it's the best thing I ever decided because I feel so much healthier in my mind and body -Whats the first thing youll do when we get out of lockdown ? 19.01.2022 #peopleofRGC Hi Im Mathilde How long have you been working at RGC and what do you do here ? I have been working at Roule Galette Carnegie for almost 2 years!! I started working as a waitress but now Ive learnt to make crepes and galettes as well as coffees and drinks. -Where do you come from in France and why are you in Melbourne ?... I was born and raised in Paris, but my mother comes from the north of France, near Lille and my dad originated from the whereabouts of Nantes. We moved to Melbourne when I was eight thanks to my dad, who got sponsored to come by his job originally for a 3 year-visa but weve become citizens now!! -What is your favourite dish at RGC ? My favourite dish at Roule Galette would have to be the Pims crepe as raspberry and chocolate is the BEST combination, or maybe the Riviera on a gluten free crepe, as the more savoury galette goes amazingly well with our homemade salted caramel, toasted almonds and ice cream. -Whats your favourite thing to do during iso ? My favourite thing to do during isolation would have to be cooking for my family and coming up with new fun and challenging recipes. -Whats the first thing youll do when we get out of lockdown ? When we get out of lockdown, I plan to see my friends and hopefully get out of Melbourne: ideally I want to go visit my family in France, but even a day hike in the Dandenongs would do me a world of good! -A little positive thing to say ? Even though this is a very challenging time and it can be mentally very rough, it is important to appreciate the little things. I have found that spending so much time with my family has enabled me to strengthen and nurture the bonds with my siblings and parents: so I hope everyone can find at least one positive thing in their situation and cherish it knowing this tough time will eventually get better :)

13.01.2022 Did you know a croissant takes at least 2 days to make and has over 80 layers folded? The perfect croissant is crunchy on the outside and soft inside. It needs to be made with very good quality butter and left to proof for just the right amount of time. In France its perfectly acceptable to dip your croissant in your coffee or hot chocolate. Try it !

I have been serving our lovely customers since April 2019, warming their soul with yummy food and good coffee. -Where do you come from in France and why are you in Melbourne ? I grew up in Strasbourg, a beautiful city at the border of France with Germany. With the bullet train, it is only 2 hours ride from Paris and it is worth visiting especially around Christmas. I travelled all around ...Australia for 1,5 years before settling down in Melbourne. Who knows where I will be in a few years, still here in Melbourne, back to France, or maybe living new experiences in another country. -What is your favourite dish at RGC ? My favourite is the old-time Merguez galette with its housemade barbecue sauce, not on the menu anymore at Carnegie but check it out in the city, our big sister @roulegalettemelbourne still serves it. You can also try l'Espelette with extra merguez. If I feel like sweet, I will go for the Chamonix: chocolate, ice cream and almond flakes for some crunch. Miam! -Whats your favourite thing to do during iso ? I am lucky to live in a sharehouse and my housemates are amazing. I love baking cakes and pastry and making everyone in the house fat. -Whats the first thing youll do when we get out of lockdown ? I will have a nice brunch with my friends (our regular rendez-vous before covid19) and when it will be safe, I will visit my family in France. -A little positive thing to say ? John Lennon would have said "Everything will be okay in the end. If it's not okay, it's not the end." It may not be the easiest time, but let's be patient, we will go through all this.
