We've joined forces with our good mates and neighbours @boneheadbrewingau on their newest creation the SPRINGTIME ICED TEA A beautifully light sour, with delicate sweetness and a cascara and stone fruit bouquet, grounded by the Berliner weisse's lactic souring. Head on over to their gram for more info @boneheadbrewingau What is Cascara? This cascara comes from a Natural processed Castillo Variety.... The ripe cherries are picked and fermented at a controlled temperature just under 40c the whole cherries are then dried for 15 days. At this point, they are milled, the outer skin of the cherry is reserved, this is the Cascara. Sourced from Finca La Villarazo in Quindio, Colombia. The farm is owned by Jairo Arcilia, Jairo started growing coffee 35 years after his father was unwell and could not run the farm any longer. We have been working with the Arcila family for over 4 years.
