23.01.2022 Spicy snake bean salad Chopped snake beans, shallots, garlic and ginger. Add fresh chillies, chilli jam or red curry paste. Stir fry in coconut oil and kecap manis.

22.01.2022 We are staying at home from markets at the moment. We have been spending time re organizing, cleaning up, replanting, getting fire safe, and catching our breath. Those of you who know us know that we have had a turbulent time in the last few months. We have lost 3 of our parents, had 3 more grand children, a daughter who is unwell and Alan has Ross River, Barmahs Forest and Epstein Barr virus. 20.01.2022 We are VERY EXCITED about a big project we have been working on this year Talk about flavour The top end popular dining experience the 50km Feast has moved... to the screens. Outside the 50km Feast is a six-part mini-series that visits some of the producers and kitchens of Territory icons. The production takes us on a voyage of good nutritious food from the wealth creators in the Northern Territory; our local producers. Each episode explores Territory grown and caught ingredients. The series tells stories from the saltwater to the soil. Episode one with Mike Scott from Organic AG and Jimmy Shu of Hanuman, Darwin will be released this Thursday via Facebook. Tune in to watch the episode at 7pm on this page. 18.01.2022 One of the ways we can help regenerate our environment is to connect ourselves back to our food. Where it comes from and how it is grown, processed, transported and sold is critical. 18.01.2022 We have been working hard making our farm fire safe. Fire breaks are in, trees cleared off fencelines and cool burns done.

17.01.2022 Probably our favourite way to use our chilli jam. Yummo! Chilli choc clusters Carob powder Cacao powder Coconut oil... Chilli jam Peppermint oil Stevia powder Crushed nuts Mix to a soft consistency. Lay on trays and chill Keep refrigerated We use Stevia powder because we have a diabetic in the house. Rice malt syrup or honey taste great too. You can add all sorts of extras - vanilla, orange oil, coffee syrup, hazelnut syrup, mango syrup chia, goji, sultanas, chopped dried mango, dried banana.... Carob and cacao give the best chocalty flavour when combined. Coconut oil and sweetener bring it all together. This recipe also makes great choc sauce. Heat gently or make a sloppier mix.

Served with pan fried eggplant slices, green papaya ferment and chilli jam.... For those asking for a recipe including amounts Sorry-we are 'wing -it- with -what -you- have- on- hand cooks! LOL Just swish it all together and cook on a low heat. Use your tastebuds as your guide.

06.01.2022 Rum Jungle Organics is committed to education. Both improving our own understanding and sharing our journey. We spend time updating our knowledge, reading professionally and following agricultural developments, particularly in the NT. At the moment there is a renewed push for large scale, industrial farming funded by big investors in the NT, particularly cotton.... This concerns us greatly as it is based in second paradigm thinking. Second paradigm farming is being held accountable for its damaging effects on soils, carbon loss, global warming, poisoning, land degradation, acidyfying oceans, animal extinctions and the global climate disaster we are facing. The second paradigm has contributed to very useful developments in our understanding of ecological services, real scientific rigour and technologies. We believe NT is positioned to develop and regulate a style of farming grounded in the third paradigm. Agroecology, regenerative farming, organic farming, carbon farming! Third Paradigm farming utilizes understandings from subsistence farming and industrial farming and moves into a new future of farming with different values framing our thinking and informing our practices. We are constantly told that third paradigm farming can't feed the world, is not scalable and is not for everyone. We are constantly told we are uninformed, misinformed and fear mongering. Not true. To understand what we mean we all need to read about the third paradigm, we need to change some of our practices, we need governments and industry bodies on board, we need to rethink what we value and we need to insist that our government and NT Farmers update their knowledge. So get onto NT Farmers, your local member, our Chief Minister and ask them what they are doing to support changes towards an agriculture sector that can farm truly sustainably.

05.01.2022 About this time of year when the humidity is high and the season has changed we pull the first planting of tomatoes and the cucumbers out to make way for the next crop rotation, wing beans and snake beans. The Tropic tomatoes and second planting of Tommy Toes get trimmed and a good dose of Organic Life, Sulphate of Potash and Guano Gold. We also spray a brew of seaweed, humic acid, and fish emulsion on the leaves and soil. This gives us a little extra time with tomatoes until the rain kicks in. Tropics tomatoes and Thai Pink Egg tomatoes will grow into the wet season if they are already in and doing well now.

04.01.2022 It's our birthday!! 20 years ago we registered our business name and applied for an ABN. What a ride we have been on. New friends, great connections, steep learning curves, depths of despair, trials, ... We have learnt so much about regenerative organic farming and about ourselves. We have learnt to trust our instincts, be strong, believe in ourselves and what we set out to do, surprised ourselves, and sometimes just kept our head down and kept working. 01.01.2022 A tour of the house and garden. We often have people ask if they can visit and look around. We want to say yes but biosecurity, economics and time management play a part in our decision to say no. We share what we can here in the meantime....
