21.01.2022 Native Raspberries are at their best after rain. Big, red, juicy and full of flavour. Get out early on the morning before the locals fly in for a feed and before the sun cooks them off and starts drying them out. Traditionally the green fruit are used to tone Yang and support Jing. 20.01.2022 Summer is here! That’s two warm cicada song filled days in a row. Our Cumquats are still bearing more than bountiful and our first crop of Bamboo shoots is a rippa, so Bamboo and Cumquat chicken stir fry tonight.
19.01.2022 I know that I’m always nagging about eating more veg. It’s because good food is paramount to good health. Here’s a snapshot of our dinner tonight. This was created by my partner after she’d had a full day at work and jobs on the farm. There’s 8 veggies here plus brown rice and seared tuna. Dressing is coconut aminos, honey and sesame oil. Toasted sesame seeds on top. It’s so much easier to fix your health when you eat well.
17.01.2022 Hello Blossoms. Zucchini blossom breakfast today. The stuffing was mushroom, marjoram, sheep curd & sprinkles of pepper and nutmeg. We baked these as a healthier alternative to deep frying. And just look at the gorgeous detail on the stamens removed from the flowers. Zucchini was traditionally used as a cooling vegetable. 17.01.2022 Here's my next batch of Sage Coconut Ferment. The bounty of Sprummer is giving us plenty to experiment with. The bottle on the left has a cupful of Mother Wild Ferment using raw coconut water in the jug. Some fresh sage leaves from our Kitchen Garden are added with each new ferment. Enjoy! The 2nd photo shows the chopped sage added and the bottle filled leaving a 50mm gap that allows the fermentation bubbles to be released tomorrow. At room temperature a 1-2 day room temperat...ure ferment is quite enough to produce plenty of bubbles without producing too much 'vinegar' while allowing good sage taste. You can also use Kefir or Kombucha starters. For a wild starter just add your prefered herb leaves or flowers to a 1/2 bottle of coconut water and let it ferment. Each batch will add extra microbes and these will change with the seasons and weather, keeping it wild! Just remember that many of these wild microbes are yeasts and will produce vinegar. You can also purchase different types of yeast as they did in the Sobah Beverages Beer which produces a zero alcohol fermentation. Well done Sobah! The 3rd photo shows a bottle of Rose Petal Ferment and the next petals top add in. The jar on the left is of Nagumi(skins and seeds included) & Passionfruit(whole pulp) Juice which we'll freeze in ice bocks for adding to whatever we fancy later on as well as a new ferment! We'll also be experimenting with our own Limes, Chillies and probably Marjoram because of its delicious flavour and traditional herbal use. Have fun! See more

It’s traditional uses are for lung infections and serious skin sores and ulcers. And yes I’m aware of the multiple levels of meaning here. I feel that USA will never recover from the damage that’s been done, just as they never recovered from their civil war, these past four years have opened all the old wounds and sores. Meanwhile the pandemic rages on and so many more are going to experience needless suffering and thousands more will die. Just as our Black Summer was our tipping point, this is theirs.
