24.01.2022 Cooking With Realfoods: Episode 17 - Hearty Winter Soup Ingredients: 1 x onion, chopped 3-4 x cloves garlic, chopped... 2-3 x cans beans of your choice 2-3 x carrots, chopped 1/2 x cabbage, sliced (see notes) 2 x Tablespoons olive oil Salt, to taste Paprika, to taste -- Notes: You can use any combination of tinned beans and vegetables for this soup. Borlotti beans and chick peas work well together, as do dried red or green lentils. Carrots add a gentle sweetness, but you can use whatever veggies you like - buy what is cheapest and in season. To make this dish even heartier, add a handful or two of uncooked rice or cubed potatoes when you add the beans. The longer you cook this dish, the more flavour it will have. -- Method: Coarsely chop the onion and garlic, and add to a large saucepan, along with the beans, and enough water to cover. Add the rice, if using. Simmer for 10-15 miuntes. Meanwhile, chop your carrots and cabbage (or other vegetables of choice). Add the oil, salt & paprika to your soup, stir to combine, and then add in the chopped vegetables. Simmer for at least 10-15 minutes more, or longer if desired. Serve piping hot. 22.01.2022 Cooking With Realfoods Ep.11 Vegan Aquafaba Mayo Ingredients: 1/4 x cup of Aquafaba (which is the liquid in a can of chickpeas) 1/2 x teaspoon dijon mustard... 1/4 x teaspoon salt 2 x teaspoon vinegar (or lemon juice) 3 x teaspoon sweetener of choice (e.g. cane sugar, maple syrup, coconut nectar, rice malt syrup, etc) 1 cup sunflower oil Method: Measure out everything except for the oil into a tall container. Very gradually, pour in the oil over a period of 2 minutes, while blending at the same time. Pour into a clean glass jar, and allow to chill in the fridge for a couple of hours. It will thicken up during this time too. Lasts for up to 2 weeks in the fridge. 20.01.2022 Cooking With Realfoods: Episode 16 - Ratatouille Ingredients: 1 x onion, chopped 4 x Cups chopped vegetables... 3 x cloves garlic, chopped 4 x Tablespoons oil Salt & pepper, to taste 1 x can chopped tomatoes Chopped parsley or basil, to serve (optional) Notes: Use any combination of vegetables for this dish - buy what is cheapest and in season. Eggplants, capsicums, zucchini and carrots work especially well together. Olive oil is the tastiest, but any oil will work in a pinch. Method: Preheat the oven to 180C. Coarsely chop the veges and garlic, and combine in a roasting dish. Add the oil, salt & pepper, stir to combine, and roast for 20 minutes. Stir the vegetables again, and roast for another 20 minutes. Add one can of chopped tomatoes, stir well, and return to the oven for a final 20 minutes. Remove from the oven, add a sprinkle of chopped parsley or basil (optional), and give it one final stir before serving. 20.01.2022 Cooking With Realfoods: Episode 20 - Sweet Potato Curry Ingredients: 1 x Sweet potato, peeled 1 x Block firm tofu, diced... 3 x Cloves garlic, finely chopped 1 x tin coconut cream 1 x tin kidney beans 1/2 x Cup corn kernels (frozen or tinned) Oil Spices - a half teaspoon of each of the following: All Spice powder, Paprika, Turmeric, Curry Powder, along with Ground Chilli and Cayenne Pepper (optional - if you like it spicy) Steamed rice to serve - - - Method: Preheat oven to 180C. Cut sweet potato into thick slices, then place into a bowl with a small spash of water, and microwave for 5 minutes. Finely chop the garlic. Cut the tofu into chunks. Place the partly cooked sweet potato on an oven tray with garlic and a drizzle of oil, and then evenly sprinkle all of the spices on top. Roast for 20 minutes. Once sweet potato is cooked, place into a saucepan with the tofu, coconut cream and corn kernels, and simmer on medium-high heat. Meanwhile, cook your rice in a separate pot. Keep stirring the curry until it's nice and hot, then add drained kidney beans, and continue to cook for a further 15-20 minutes. 16.01.2022 Cooking With Realfoods Ep.12 Cookie Dough Bites (Gluten Free!) Ingredients: 1 x Can chickpeas, drained (reserve the liquid for vegan mayo, see notes) 2/3 x Cup of peanut butter (or any other nut/seed butter)... 1/4 x Cup sugar or sweetener of your choice (e.g. sugar, coconut nectar, maple syrup, rice malt syrup) 1 x teaspoon baking powder 1 x Pinch of salt 1/2 x Cup chocolate chips Method: Preheat oven to 175C. Combine all the ingredients, except for the chocolate chips, in a food processor/ blender/ bowl with stick blender and process until very smooth. Pop into a bowl and stir in the chocolate chips. The mixture will be very thick and sticky. With wet hands form into balls, Place on baking sheet on tray and flatten with fork. Bake for 10 minutes, leave to cool before eating. NOTE: This recipe uses the chickpeas from the can that we used to make vegan aquafaba mayo recipe earlier this week. 14.01.2022 Cooking With Realfoods: Episode 19 - Choc Banana Oat Cookies Ingredients: 1 x Banana (very ripe or overripe) 1 x Cup rolled oats... 2 x Tablespoons sweetener of your choice (e.g. coconut nectar, maple syrup, rice malt syrup, brown sugar) 1 x Tablespoon coconut oil 1 x Tablespoon cacao (use 2 x Tbsp for a stronger flavour) 1 x pinch of salt - - - Method: Preheat oven to 170C. Melt the coconut oil in the microwave for about 20 seconds. Mash the banana, then add the oats, sweetener, cacao, salt and the melted coconut oil. Stir until well combined, and leave the mixture to rest for 10 minutes. With wet hands form into balls, place onto a baking sheet, and flatten with fork. 08.01.2022 Cooking With Realfoods: Episode 14, Banana Oat Pancakes Ingredients: 2 x extra ripe bananas 1 x Cup rolled oats... 1 x Pinch salt 1/2 x Cup milk of your choice (may need a bit more or less) Oil for frying Your choice of toppings: we've used peanut butter, maple syrup and blueberries. Mash bananas. Method: Blend half of the oats in a blender until they turn into flour consistency. Put them in a seperate bowl along with the rest of the oats and all of the other dry ingredients, mix together. Add dry mixture to the mashed bananas and stir. Slowly add in a little bit of the milk and stir until it becomes a thick sticky paste, add a little more milk if you need to. Heat up olive oil in pan on medium heat, and add half of the pancake mixture. Fry until golden brown then flip to the other side. Add your toppings. If you don't have a sandwich press, you can cook the sanwiches in a frying pan on medium to low heat, pressing down on top with a spatula, and flipping every minute or so, until the cheese is melted, and both sides are golden brown. - - - Ingredients: 2 x slices sourdough bread (or use any bread you like) Vegan spread (or use butter or any margarine of your choice) - - - Suggested fillings: Cheesy Beans: 1/4 x cup Baked Beans Grated cheese (ours is vegan, but use what you have on hand) Sliced pickles Salt and Pepper Tomato & Cheese: Grated cheese (ours is vegan, but use what you have on hand) Sliced Tomato Basil (We pick ours fresh from the RUSU edible gardens) Salt and Pepper - - - Method: Generously butter one side of each slice of bread. Flip the bread over, and add your filling of choice. Put the second slice of bread on top (butter side out). Assemble together and cook on sandwich press until the outside is golden brown and the cheese is melted. 03.01.2022 Cooking With Realfoods Ep.13 Carrot & Kidney Bean Burgers Ingredients: 1 x can kidney beans 1 x small onion, finely chopped... 1 x large carrot, finely grated 1 x teaspoon ground cumin 1 x Tablespoon oil, plus an extra 2 x Tablespoons to fry the burgers 2 x teaspoons flour, plus extra to shape the burgers Method: Drain and rinse the kidney beans, then simmer for 5-10 minutes to soften. Heat your oil and fry the onion, carrot, and cumin, with a good pinch of salt, until nice and soft. Mash everything together with a fork until well combined, then add the flour to firm it up. Shape into four burgers with floured hands, and sprinkle with any excess flour (you can cook them straight away or store in the fridge for up to two days). Heat the remaining oil in the frying pan on a medium heat. Fry your burgers for a couple of minutes on each side, until golden brown and piping hot. Ingredients:... 1 cup dates 2 Tbps Cacao Powder 1/2 Cup of Tahini (can substitute with any nut butter) 1 Tbsp Coconut Oil Desiccated Coconut for coating Generous Pinch of salt Method: Firstly cover the dates with boiling water set aside to soften (roughly 10 mins) then drain. Pop 1 Tbsp of coconut oil in mug and microwave to melt, takes around 20-30 seconds. Blend everything together. Take 2 Tbsp of mixture into hands and roll into balls. Cover with coconut.
