24.01.2022 Quick, delicious & nutritious! A quick little omlette, Kim chi sauerkraut, fresh sprouts, paleo bread & homemade Basil cashew cheese! With grapefruit juice on the side Only took a few mins to throw together, and has lots of nutritional value! Probiotics & fibre from the sauerkrat for great gut health! Lots of protein & good fats in the eggs & cashews so I feel full for longer & avoid a blood sugar spike! Amazing bioavailable nutrient value in those sprouts. This one was a yummo lentil Shepherds pie made with soaked puy lentils, which are just the prettiest little things when theyre raw! With lots of yummy veg cooked in, and a scrumptious sweet potato mash made all cheesy with nutritional yeast and a little smattering of cheese on top! Give myself a "spa date" at home including exfoliation, face mask, Mani & pedi, shave my legs & wash my hair Go for a stroll in the sunshine Meditate Make a cup of herbal tea Go fruit & veggie shopping (my favourite kind of shopping & I never feel guilty about a big grocery bill if its all healthy stuff!) read a book Eat some veggies Have an early night Sometimes we just forget to take good care of ourselves, but the payoff is huge! If anyone out there is feeling a bit down, or wrapped up in some drama, dont forget to come back to your centre, take a deep breath & remember who you are. 14.01.2022 A huge misconception I hear a lot is that it takes way more time, money & effort to eat healthy! While there is truth in the fact that it takes marginally more time to throw together a fresh meal than microwave one, I believe you can still serve up family-friendly, affordable, healthy and rediculously delicious food every meal if you just know how! In saying this, I realise not everyone knows how to do it, and I believe thats actually what the problem is! Ed...ucation So lovers, witness the quickest dinner Ive put together in a long time... Coles veggie & bean patties, homemade tahini, honey & ACV dressing, salad greens, leftover crudettes (veggie sticks from lunch), avocado, and a good lashing of Kim Chi on top (ta @peaceloveandvegetables, yours is the bomb!) All this extravagant yumminess only took 10 minutes to throw together (with the help of a 2 year old... So probably would be more like 5 minutes without the help of a 2 year old ). My advice? Start today, pick a healthy recipe every week that inspires you and challenges you a bit, and learn how to cook the ingredients so it becomes a regular addition to your diet! Change happens gradually and is just the culmination of lots of small steps towards your goals. Pizza has always been one of my favourite foods, and about 6 years ago this lovely lady gave me her recipe for pumpkin & spelt dough, and Ive been making it ever since! So easy, no rising time needed & I just keep batches of the stuff in the freezer waiting to be made into yummo pizzas covered in roast veg & a bit of cheese I also I use some nutritional yeast to make them extra cheesy with minimal cheese. 04.01.2022 Rice paper rolls for lunch, lots of veggies & new textures & flavours for the little one to try. All the meals I cook have had to be a bit toddler-friendly for a while because Huxley was very picky for the last 6 months, but my nearly 2 year old is getting more adventurous & Im now starting to introduce him to new things! Today was rice paper rolls, which we havent had for ages! He tried a bit of mine, but prefered to just have nibbles of the ingredients by themselves. I... found some noodles that were made of mung beans, and we added some baby spinach too. The sauce was a big hit: made with peanut butter, soy sauce, vinegar, fish sauce, honey & sesame oil. He even tried some of the sardines, although they got spat out, but all that matters is he tried a bite!
