25.01.2022 ATMOSPHERE IS EVERYTHING . Our dining room's seat less people now but I believe this is leading to a great change in the Sydney dining scene. Previously, when we could seat more people at once we would get a single hit and the restaurant would empty out as quickly as it filled up. Now we are seeing three, sometimes four dining slots. The early birds at 5:30pm, the 6:30pm masses, the 7:30pm classics, and occasionaly the 8:30pm wild ones on a late one (haha). The atmosphere in ...our stores is much nicer with this longer service and long may it continue. . Bookings are essential to help manage and juggle this new trend. 23.01.2022 A HOSPITALITY INDUSTRY TRAIN SMASH IS COMING OUR WAY . I have spoken before about how difficult the restaurant business was before COVID-19. With low profit margins the industry was broken and supported by passionate owners driven by a love for the game rather than the riches on offer. . When I look around I see more and more restaurants closing with FOR LEASE signs dotted along every high street. The real worry is this is just the beginning. When the goverment hand outs st...op or are reduced in a months time, more and more hospitality businesses will go under. Everybody is at risk, even your favourite restaurants and cafes that have been around for a long, long time, could crack under the strain . There is a lot of talk in the industry on podcasts, news articles and the like that talk about the necessary reset/change the industry needs but I wonder if the you, the restaurant consumer is listening or is even in a position themselves to hear the changes that need to happen . All I can ask / hope for is the dawn of the concious restaurant consumer. What I mean by this is that you the consumer have the power to choose the restaurants you want to keep through your direct actions. If you are in a position to dine out choose wisely and dine as often as you can at the places you love. Limit the number of places you go to but spend as much money as you can with them. Do it again and again, don't constantly chase the next new opening! . This might not be Salmon & Bear for all of you but I hope it is for some of you. Dont be that person who says in a years time "oh I used to love that place but I cant remember the last time I went, such a shame they closed" . 23.01.2022 WHAT IS VALUE? I wanted to share with you how Joel and I went about creating our new menu post COVID lockdown. Upon realising the financial strain the pandemic would place upon most Sydney households we decided to change our menu. We didnt make wholesale changes as we believe one of our strengths is the broad range of dining options we offer. Whether it be a cheeky round of fish tacos or a slap up fish/steak supper we do believe there is something to suit everybody and every... dining occasion. We wanted to give back to our diners and offer more value in a traditional portion size sense so we decided on 3 things: 1. No dish on our menu is over $30 with the majority under $25. 2. All side dish portion sizes were increased, as were the poke bowls. 3. We added three great value, one plate, complete meals. Our Fish Pie, Fish Curry and Fish Stew for $25.95 or less. . A few things to note: *We work on a standard 30% cost of goods model when working out pricing and hopefully this leaves us with 5-10% profit after paying all other costs involved in running our restaurant *Fish is an expensive protein to start with as you will see in the supermarket and the prices can change at short notice *We aren't trying to rip anybody off, just make a living I really hope that the dining experience at Salmon & Bear isn't judged by or limited to the amount of food on the plate as it is much, much more than that. Lyall is the waitress that this praise refers to but she was ably supported by chefs Liam & Bibek on the night. Guys take a bow! The same waitress did an excellent "meet and greet" when we arrived and I observed how well she coped as the restaurant filled up - singled handed! "Friendly and efficient" is how I would sum up her performance. It was our first visit and she explained all the dish choices very well. We were very impressed with our entrees and main courses. You can add french fries, basmati rice, baby cos salad or sweet potato wedges to your grilled fish/meat along with a sauce. ... "Nobody is ordering the other sides", he said. 19.01.2022 THE MIGHTY MIBRASA OVEN Taking pride and place in our kitchens is the Mibrasa oven. Coming all the way from Spain, this coal fired beast is what we use to cook all our fish & meat dishes. Its a lot to handle but when you can harness the power we think the results are spectacular. Steaks get a beautiful outer crust and stay juicy in the middle, chicken gets that lovely char, and our fish achieves the holey grail of crispy skin and a poached centre. ... Its a brilliant product that in truth is too expensive for us to carry on our menu but once we tasted it we knew no other salmon would compare. Right now what is happening in the UK due to Covid-19 only serves to show how lucky we really are in Australia. In my opinion the hospitality industry back home has been treated really poorly by the UK government, with many amazing restaurants not knowing what they can do from one day to the next, with policy changes happening almost weekly wi...th little to no notice. 06.01.2022 To all our customers old and new who have supported us since we reopened June 1st we thank you from the bottom of our hearts. It was a great feeling to see our dining rooms come to life again over the last week. Even with limited numbers, there was the energy in the room that we missed for 10 weeks. Whilst take away sales kept the business alive, just (!), we didn't get into this game to listen to home delivery tablets dinging and packing food into bags and boxes. Thank you f...or being patient with us at times, as everybody gets used to the new normal, the busy periods are harder to predict and thus, staff accordingly. We are still working with a small team as we build our turnover back up. In that time we have opened and sadly closed a second store in Newtown and since opened a third store in Crows Nest which is now 1 year old. The restaurant biz is not for the fainthearted.
