24.01.2022 Why should we be eating more Sea Urchin? You see us going on about Sea Urchin a fair bit. Firstly, because a true seafood lover would know what a great eatin...g experience they are. Secondly, the environmental benefits of eating Urchin are enormous. Craig Shephard is an Environmental Scientist from Sydney, NSW and has been harvesting Sea Urchin and Turban Snail commercially for almost 10 years. Working in conservation led him to harvesting sea urchins. He says that they’re one of the most sustainable species to fish for because every urchin is hand collected with zero bycatch. Craig has the advantage of diving in Sydney and delivering products to SFM live, just a few hours after they’ve been caught. Craig says he loves his job as it allows him to work in Sydney, but going to sea feel likes working far away in some remote community and once you get along Sydney’s coastline it’s actually amazing to see how healthy it is and how diverse the wildlife is.
