10.01.2022 It’s been a while since I last shared my story and journey on this page. I’m grateful to have many new likes and follows, so I thought I’d share again, for those who are not familiar with my why I embrace a Ketogenic Lifestyle. Over the last 25 years I’ve tried most diets out there, and reported weight loss quick fixes. Whole heartedly sticking to them, loosing some weight and putting it all on again with a few extra kilos each time for my troubles. I’ve felt so trapped ...in a yo-yo dieting cycle. I knew that there had to be something wrong, this struggle was exhausting and humiliating for me. I was miserable, my health and well-being were compromised and I so often had a feeling of hopelessness. I didn’t know what else I could do! Eventually, nearly 2.5 years ago, I was checked for Insulin Resistance...........there it was! My Ah-Ha moment! The reason I’ve had such a hard time with weight issues for so many years. Most importantly and a great relief to me was that I could do something about it. Being Insulin resistant means I’m carb intolerant & store fat instead of burning it, which leads to more and more weight gain. I was actually pre diabetic despite repeated normal blood sugar test results over the years. This was the piece of information that shocked me the most! Associated with Insulin Resistance is feeling hungry way to often, and never feeling full, even after a meal. So despite following a very clean, whole food, plant based lifestyle for many years, I needed to make a lot of adjustments to what I considered to be a very healthy diet. It just wasn’t the right one for me with my underlying metabolic syndrome. Bearing in mind that all vegetables are carbohydrates, as a vegetarian it was a bit of a daunting thought when I first started on Keto. Counting carbs and switching to a Ketogenic Lifestyle has been the answer for me. My very stubborn Insulin Resistance is slowly edging downwards towards an optimal number, and I look forward to a much healthier future. I share my story in the hope that it may be helpful to someone else who has experienced a similar journey. A Ketogenic Lifestyle may just be your answer too. 01.01.2022 What’s in the veggie box this week ??? Inspiration from my Keto Kitchen I’ve used my zucchini’s this week from my box from ByNature, to make these delicious fritters. Really simple, with very few ingredients, but so tasty ... You can use coconut flour or almond meal in this recipe. A dollop of my homemade mayonnaise, some salad, and it’s the perfect low carb meal. (I’ve been told by my non vegetarian clients, that adding a tin of pink salmon to the mixture works well and makes delicious fritters) Have a wonderful weekend Sandy
