25.01.2022 Balancing two kids (three if you count the husband ), plus a baby while trying to run a business can be quite challenging at times. As much as I enjoy cooking homemade meals some days are extremely busy, the fridge is running low and I feel like a night off. Luckily @_mamagoodness_ came to the rescue with their winter nourish pack filled with so many goodies. I was so excited to try their homemade soups as they used our organic stock as a base and let me tell you they tasted... absolutely amazing, the flavor combinations of the pumpkin and black bean soup and chunky carrot and chickpea soup were so good that it was hard to stop at one bowl, my husband would try to steal my secret stash I was fortunate that got me by three days. The basil kale pesto and vegan cheese from @botanicalcuisine and sauerkraut from @thefermentary went perfect with the meals and their lactation cookies and tea helped keep up my supply. I had to hide the cookies from everyone as I cherished every bite. It felt so good knowing that I was fueling my body with wholesome nourishing food. @_mamagoodness_ Thank you for making such great food for mothers and families. 24.01.2022 Checkout some interesting facts below shared by @fodmapdietetics on Low FODMAP Lentils. Do you avoid lentils and legumes because they trigger your IBS symptoms? This is something I see really often in clinic. When I ask further, I often find many clients have eaten lentils/legumes with other high FODMAP foods (onion, garlic, high FODMAP vegetables). It may be the total load of FODMAPs and the portion size that’s leading to poor tolerance.... Lentils & Legumes contain a FODMAP group called galacto-oligosaccharides (GOS). GOS are prebiotics so they are actually very good for gut health (feed good gut bacteria) but if you have a sensitive gut (IBS), a lot of lentils/legumes can trigger bloating and pain. On my story yesterday, around 75% of you said that you haven’t tried reintroducing GOS back into your diet. Reintroducing these FODMAPs can help to: a) understand your personal threshold/tolerance b) improve gut health c) make social eating/eating out a lot easier with more options Here are some tips for reintroducing lentils: - There are low FODMAP portions: 1/2 cup lentils and 1/4 beans/legumes are low FODMAP and suitable for the elimination diet. If you haven’t already, start here. - Start with canned lentils/beans. Strain the water from the can & rinse very well. A lot of the FODMAPs leach out into the canning water and are removed with rinsing. - Similarly, if using dry beans/lentils. Soak in water overnight, then rinse, cook in fresh water and rinse again to serve. - Keep the rest of your meal low FODMAP (no onion/garlic and low FODMAP veg, bread etc). - Chew well and it in a relaxed environment to help with digestion. A few of my favourite Low FODMAP @fodmapfriendlyfoodprogram flavourings for lentils/beans are: - @san_elk low FODMAP stock - @cobramestate garlic & onion infused oils - fresh herbs & plain spices - salt & pepper - lemon - goats/feta cheese (40g/serve) - low FODMAP vegetables: spinach, tomato, carrot, eggplant These low FODMAP lentils were so flavoursome, even my puppy was interested! I’ve been asked to share it, so here you go, finally! Ingredients: 2 tbsp olive oil 1 leek, halved, washed, thinly sliced 2-3 garlic cloves, crushed (do this first and allow to sit!) 1 large carrot, diced 1 large zucchini, diced 1 swede/turnip, diced 1 sweet potato, diced 2 Desiree potatoes, diced 1 tsp turmeric powder 1 tsp chili flakes 2 tsp ginger, finely chopped 1 cup quinoa, rinsed super well 8 cups vegie liquid stock 400-500g chicken thighs Tamari (wheat-free soy sauce) Rocket/spinach, to serve Step 1: Heat oil on medium heat in your largest soup-making pot. Add leek and garlic. Cook, stirring, for about 2 mins or until soft but not browned. Add carrot, zucchini, swede/turnip & all potatoes, plus turmeric, ginger & chili flakes - cook, stirring, for about 4 mins. Then add quinoa, liquid stock, chicken thighs & 1 cup cold water. Plus a good dash of tamari! Increase heat to high and bring to the boil, stirring occasionally. Step 2: Reduce heat to low. Simmer, partially covered, stirring occasionally, for about 30mins. You want those vegies tender! Step 3: Remove chicken thighs from soup, chop them up. Return chopped chicken to the soup, season with salt & pepper, stir, and it’s ready to serve! I like to add some fresh greens like rocket and spinach to a bowl, and then ladle the soup on top. Enjoy, yum!

The best winter salad - warm roasted seasoned vegetables contrasted with fresh spinach & dressed with such a satisfying Katsu sauce. Highly recommend including the hemp seeds and serving with some chilled sliced avocado Pumpkin Greens & Hemp Salad with Katsu Dressing (serves 4) For the dressing, whisk together: 2 tspns Japanese curry powder 1 1/2 tspns @san_elk vegetable stock powder 1/3 cup filtered boiled hot water 3 tbspns vegan mayo 2 tspns rice wine vinegar 1 1/2 tspns light soy sauce 1 tspn toasted sesame oil 2 tspns maple syrup (or more to taste) A little salt & white pepper to taste Whisk all the ingredients together & set aside to serve (tip: it is easier to create a slurry with the Japanese curry powder, stock & 1 to 2 tbspns of the water first before whisking in the rest of the ingredients). For the veggies: 2 tbspns EVOO half a pumpkin cut into 4cm chunks 1 tspn sweet paprika 1/2 tspn garlic granules 1 tbspn maple syrup Salt & black pepper to taste 2 bunches of asparagus cut in half 2 heads of broccoli cut into florets 1 red onion cut into wedges 3 garlic cloves finely sliced 1/4 cup pumpkin seeds 2 cups baby spinach 1/4 to 1/3 cup hulled hemp seeds An avocado to serve (optional) Preheat the oven to 200C. Line a large shallow oven tray. Place the pumpkin, red onion & garlic on the tray. Sprinkle with the paprika, garlic granules, salt & pepper & drizzle over the maple syrup & EVOO. Toss well & bake in the oven for 10 minutes before adding the broccoli, asparagus, hemp & pumpkin seeds. Spray lightly with some garlic olive oil or just olive oil. Bake for another 10 to 12 minutes until the pumpkin & broccoli is just tender. 17.01.2022 A gorgeous barley risotto from our friends @thegreencanopy_ Barley Risotto....so deliciously nutritious, somewhat nutty and this version with garlic roasted tomatoes, loaded with mushrooms & greens is definitely soul food at its best 4 tbspns EVOO... 2 tbspns vegan butter 12 cherry tomatoes 6 garlic cloves finely chopped 2 celery stalks finely diced 1 onion finely diced 2 carrots grated 3 - 4 tspns @san_elk stock powder dissolved in 7 to 8 cups of boiled water or 2 1/2 ‘chick’n’ style stock cubes dissolved in 7 to 8 cups water 2 tspns porcini powder 1 tbspn chopped fresh thyme leaves 600g mixed mushrooms thickly sliced 7 silverbeet leaves finely sliced 2 cups baby spinach leaves 1 cup white wine 1/2 cup finely chopped fresh parsley 500g pearled barley washed, soaked overnight, rinsed & drained Sprinkle of smoked salt Salt & black pepper Add any washed suitable vegetable scraps to the hot stock over low heat. Keep the stock hot. Preheat the oven to 200C and line a small oven tray. Place 3/4s of the chopped garlic & the vine-ripened cherry tomatoes on the oven tray. Drizzle with olive oil, season with some salt & black pepper & bake for 10 minutes or until the tomatoes look lovely & roasted. Remove & set aside. Heat 2 tbspns of EVOO & the butter in a deep sauté pan. Add the rest of the garlic, onions, celery, thyme & carrots. Sauté for 4 to 5 minutes before adding the mushrooms & the silverbeet. Sauté over medium to high heat until the vegetables are tender & the mushrooms are cooked. Add the barley & porcini powder and stir well. When heated through, add the wine & cook, stirring for 2 to 3 minutes before adding 5 to 6 ladles of the hot stock. Stir then cover for 3 to 4 minutes before stirring and adding another 3 to 4 ladles of stock before covering again. Turn the heat down to medium and repeat the process until the barley is still al dente but tender enough to enjoy. This should take about 40 minutes. Finally, toss in the parsley, tomatoes & garlic & all the garlicky olive oil from the tomato pan. Add a dollop of butter, the baby spinach, a little more cracked black pepper & salt to taste. Gently toss to combine, cover for 5 minutes then serve.

10.01.2022 Posted @withregram @fodmapdietetics Low FODMAP Lentils *watch me make these in the Lofo Lentils highlights/stories* Do you avoid lentils and legumes because they trigger your IBS symptoms?... This is something I see really often in clinic. When I ask further, I often find many clients have eaten lentils/legumes with other high FODMAP foods (onion, garlic, high FODMAP vegetables). It may be the total load of FODMAPs and the portion size that’s leading to poor tolerance. Lentils & Legumes contain a FODMAP group called galacto-oligosaccharides (GOS). GOS are prebiotics so they are actually very good for gut health (feed good gut bacteria) but if you have a sensitive gut (IBS), a lot of lentils/legumes can trigger bloating and pain. On my story yesterday, around 75% of you said that you haven’t tried reintroducing GOS back into your diet. Reintroducing these FODMAPs can help to: a) understand your personal threshold/tolerance b) improve gut health c) make social eating/eating out a lot easier with more options Here are some tips for reintroducing lentils: - There are low FODMAP portions: 1/2 cup lentils and 1/4 beans/legumes are low FODMAP and suitable for the elimination diet. If you haven’t already, start here. - Start with canned lentils/beans. Strain the water from the can & rinse very well. A lot of the FODMAPs leach out into the canning water and are removed with rinsing. - Similarly, if using dry beans/lentils. Soak in water overnight, then rinse, cook in fresh water and rinse again to serve. - Keep the rest of your meal low FODMAP (no onion/garlic and low FODMAP veg, bread etc). - Chew well and it in a relaxed environment to help with digestion. 02.01.2022 Who doesn’t love a nutritious bowl of homemade vegetable soup. I love making a big batch so have left over for busy days. The gorgeous @jessica_prescott_ from @_mamagoodness_ or should I say ‘queen of soups and sourdough bread’ has ‘made this nutritious and wholesome vegetable and chickpea soup using our vegetable stock and organic vegetables from @organicease what a great way to use up fresh vegetables. I’ve been making a variation of this with my @organicease veggie box every week and it never disappoints. This ones got onion, leek, mushrooms, garlic and carrot which I slightly browned before I adding the stock (@san_elk only always and forever) and then potatoes and a tin of chickpeas and finally, beans, peas and kale, added for the final few minutes of cooking time once the potatoes and carrots were tender. I try not to group foods into ‘good’ and ‘bad’ categories these days but nonetheless, I enjoy having a pot of something like this on the stove that I can pig out on because I’m cold or tired or stressed or all of the above, without feeling guilty. They are traditionally made from ground chickpeas or fava beans, herbs and spices. The mixture is then formed into balls or patties and can be either pan fried in oil or baked. @thegreencanopy_ have created this gorgeous falafel dish, check out recipe below. Try this recipe & let us know if it hit the mark #falafel #plantbased #bestofvegan #vegangotgame #vegancanteen #vegan_veganfood #thrivemags #plantpowered #vegansofig #vegana #vegano #healthyfood #healthylifestyle #healthyliving #veganrecipes #chickpeas Falafels (makes 32 balls): * 375g dried chickpeas (soak in filtered water for 24 hours then drain) * 1 1/4 cups chopped fresh parsley * 4 garlic cloves * 8 scallions chopped into 1cm pieces (white & green parts) * 10 fresh mint leaves * 2 tspns ground cumin * 1 tspn baking powder * 1 1/2 tspns salt * 2 tbspns plain flour * 1 tspn garlic powder * 7 tbspns filtered water Place the drained chickpeas in the food processor and place all the other ingredients on top. Pulse a few times first then scrap down the sides. Process on high for 10 seconds, scrap and process for another 10 seconds. Repeat until the mixture resembles a grain-like texture (maybe a cross between quinoa and cous cous. Shape into balls (you should get approximately 32 balls). Place on a tray on greaseproof paper and refrigerate for an hour. Heat light olive oil in a pan (you want enough to at least come half way up the balls). Place the balls in the oil and fry until golden and crispy on all sides. Drain on some papertowel and eat as soon as possible! Tahini dressing: whisk together, 1/2 cup tahini, 4 tbspns lemon juice, 2 crushed garlic cloves, 1/2 tspn @san_elk vegetable stock powder dissolved in 1 tbspn hot water, salt to taste, 1/4 tspn ground cumin, a pinch of cayenne, 1 tbspn maple syrup & 1/2 a cup of filtered water.
