02.01.2022 Tonight’s dinner was a delicious concoction of leftovers and contents from the fridge crisper drawer that needed using up: Thai chicken and mushroom soup - so yum! Chicken stock flavoured with lemongrass, fresh ginger, kaffir lime leaves, , soy sauce, lime juice and fish sauce with shredded chicken, mushrooms, Chinese broccoli, spring onions, Thai basil and coriander. It’s incredibly light but soooo satisfying - look out for it on the menu soon. #leftovers #soup #thaifood
