Yummmy Ingredients:... 500g potato boiled and mashed 150g cooked lentils 1 onion diced and caramelised and Cookd in olive oil and garlic Herb bread crumbs (optional) 60g cheddar cheese grated 1 egg Method Mash potato using your hands . Add onion and grated cheese and 1 beaten egg. Add lentils as mix well. Dip in bread crumbs and bake for about 20 mins. To serve - on lettuce to make a wrap or on a bagel... add haloumi , organic tomato and basil dip. Wrap and enjoy this easy highly nutritious Sattvic recipe. Heba

17.01.2022 Raw Red Cabbage & Rice Rolls. This is a novel #vegan #sattvic dish I created for the conscious eater. Its fairly simple to make and packed with proteins, fibre, and antioxidants! plus, t will keep you full for hours !... Ingredients: - Basmati rice - Chickpeas - brown or french lentils - Red cabbage - Lemon and olive oil - Natural almonds & pine nuts - green continental parsley How to prepare: Pre-soak the chickpeas and lentils and bring them to the boil until soft (take care not to overcook as they will become too mushy) Lightly roast the nuts. Cook rice on low heat and add turmeric to colour it. Cook with veg oil. To plate it up: spread cabbage leaves on a plate and add the mix of (rice, chickpeas, lentils, little lemon juice and cut up parsley) in the centre of the leaves. drizzle with lemon and olive oil and add almonds and roasted pine nuts on top. I use Pizza herbs like thyme , basil . - soy sauce Method: Precook rice or use leftovers from the day before. Heat wok add sesame and veg oil and onion coriander , English spinach, asparagus and peas . When the leaves are wilted, add the rice separate with fork. Add some more oil and soy sauce and add one egg to the rice and veg only cook for another minute after that. Add chilli spices and coriander ... I like to add avocado sauce to make the dish creamy. Dip one: yoghurt, garlic , cucumber and mint, salt and olive oil Dip two: vegan spinach , basil and walnut dip with lemon and sunflower oil Dip three: red capsicum and olive tapenade with spices and chilli 2- indian paneer cheese medley Ingredients: indian paneer grilled , English spinach , leeks, tomato and broad beans with mozzarella and sun dried tomato crisp bread 3- yellow turmeric rice Ingredients: cooked steamed rice , organic butter, sesame oil , soya sauce , turmeric and roasted walnuts (usually I use pine nuts as well).

13.01.2022 For #Halloween from Elephantastic #Vegan Ingredients 1 cup frozen raspberries 1 tablespoon rice syrup or maple syrup or agave syrup... 1 cup + 3/4 cup (150g + 100g) vegan baking chocolate (or chocolate chips) Instructions Heat the frozen raspberries in a small pot on medium-high heat until soft, mash the raspberries until there are no large chunks anymore & add the rice syrup. Give it a mix and set aside to cool. In a double boiler, melt 1 cup of the chocolate. Meanwhile place 8 muffin liners in a muffin pan. Place about 1 1/2 teaspoon of melted chocolate in the muffin liners and tilt them, so the chocolate spreads to the sides. Repeat for all the muffin liners and place it into the fridge for a few minutes (until the chocolate hardens). Melt 3/4 cup of vegan chocolate in the double boiler. Meanwhile add about a teaspoon of the raspberry filling into the chocolate coated muffin liners (place it in the middle). Once the chocolate has melted, pour it over the raspberry filling. Tilt it a bit so the top is covered with the chocolate completely. Let it harden in the fridge for about 5 minutes. Once the chocolate is hard, carefully remove the cupcake liners and enjoy.

13.01.2022 Heres the recipe for Avocado Chocolate Mousse by Melissa Castleman. 2 ripe avocados, skin and stone removed 1/2 cup cacao or cocoa powder 1/2 cup honey... 1/2 cup coconut cream or milk 1 teaspoon vanilla bean extract pinch of sea salt Chuck it all in a food processor or blender and give it a whizz! Depending on your taste you could substitute the coconut milk for any other milk and the honey for an alternative sweetener. Its kind of thick so might glug up in your blender just add more liquid. I mucked around with the recipe a bit as the original called for maple syrup, too expensive for me! The addition of cinnamon could be nice too. Yummo!!!

Rice medley : - precook the rice about two cups, I use small grain rice - diced tomatoes about one cup - garlic and salt - Italian herbs - olive oil How to cook- Score the zucchini with a sharp knife , be careful not to cut through the outer layer When fully stuffed place in pot , add two or three cups red sauce and let it simmer for about 20 mins or until zucchini cooked but not over -cooked . Prepare couscous with spices (no more than 2 mins in boiling water, separate with a fork). When ready, add fennel and plate up on cabbage leaf with diced cucumber and soy sauce. Ingredients :... 2 c walnuts 1/2 c almond milk 1 c rice malt syrup or maple 1c raw peanut butter 1 tsp vanilla 1 ripe banana Method: Grind walnuts in food processor with 1/4 cup milk and 1/2 c sugar syrup. If too runny add walnuts until you have a doughy mixture . Take the Dough and spread on base and sides of a freezer tray. Then mix banana in food processor with rest of milk and sugar syrup , vanilla and peanut butter. I added LSA mix. Slightly runny consistency. Empty contents into base , cover with cling wrap and freeze 4-6 hrs. Enjoy

Garlic and onion (or replacements) Indian spices (coriander, Cloves, turmeric cardamon, nutmeg) 1/2 c water with corn flour for thickening Cook on low heat . When well cooked , add water and corn starch let it cook for another 10 mins . Serve warm with roti and like juice ! Yummm
