20.01.2022 Bloody amazing cauliflower salad! If you saw my recent story I was roasting some organic cauliflower (courtesy of @the_corner_dispensary ) and my intentions were to throw together a cauli salad. I'm a "use whatevers in the pantry " kinda girl and I happened to find some @weyhillfarmgarlic salt and @frombasquewithlove Moroccan couscous which turned my roasted cauliflower into an epic salad. I added baby spinach to the couscous and some toasted walnuts to top it off. Perhaps a... bit of feta would have been great too..... *Coat cauli florets in EVOO and a sprinkle of garlic salt, roast until a bit crispy and tender. *Toast walnut pieces (or extra slivered almonds which are already in the couscous) *Prepare Moroccan couscous as per directions but add handfuls of baby spinach before you pour in the boiling water. *Mix together and there it is, to easy, packed full of flavour and nutrient density. #springsalad #summersalad #easyfood #nutrientdense #wholefoodmadeeasy #plantbased #foodasmedicine #nutrition #sunlover #bbq #bbqweather #veggies #vegetarianrecipes

14.01.2022 Mushroom goodness! I've had some requests for this recipe after posting my breakfast to my story. Not much to it, just simple, healthy food. Sliced mushrooms cooked in a dash of EVOO and some good quality butter, salt and pepper and fresh thyme. 14.01.2022 This is my beautiful girl telling me to stop hogging the fire and let her assume the position! Damn it's cold out there! I'm not a fan of winter but I'm a pretty positive person so I'm going to give you all some "positive " things to focus on for winter. I know I need the constant reminders of the good side of the cold to get me through! So here goes.... * Warm, comforting foods! Number 1 of course. Now comfort food doesn't mean junk or calorie dense, think soups, stews, cass...eroles, roasts, warm salads, hearty but nutrient dense. Opportunities to add bone broth, warming herbs and spices like ginger, chilli, turmeric, cinnamon, nutmeg. *Exercise is great in the cold! It gets the blood moving, you don't get super sweaty and red faced so much and it's a perfect way to keep warm. Don't make excuses.... * When it's cold your body needs to work harder to keep warm which essentially means you are burning more calories at a resting rate than you normally would. Exposing yourself to a little bit of cold is actually good for a bit of fat burning. Just don't get to teeth chattering stage to often otherwise you may start to put pressure on your immune system. 13.01.2022 Breakfast bowl! No granola here guys. This Breakfast has real substance. Lots of fibre and complete protein to keep your blood sugars stabilised. I'm hooked on fermented veg and add it wherever I can. Krauts and kimchi are a great way to add a source of probiotics and additional fibre to feed your gut bugs and keep your digestive system healthy. If you've blown out over Christmas fermented veg is a good way to start to bring your system back to normality. Oh and did I mentio...n that this took me literally no time to make: add egg to water, bring to boil, turn off heat and let stand for a couple minutes depending on how runny you like your yoke! I used @bitemefinefoods sweet potato patties as a base, all vegan, topped with egg and a side of @kehoeskitchen kimchi. 13.01.2022 Spring is here and I am so excited for some sunshine! I'm sure you're all trying to get out there to soak up a little vitamin d cause that's what you've been told you need to do right? Well it's quite a lot more complex than just getting some sun and unfortunately a huge amount of people are low or deficient in vitamin d. Initially UV rays on the skin will begin to stimulate cholesterol (yes we need cholesterol in our bodies) to start the conversion to active vitamin D. Alo...ng the pathway there are further conversions in both the kidneys and the liver to get to the active form of vitamin d. So as you can imagine if there are any sorts of issues along those conversion pathways the ability to convert and utilise vitamin D is hindered and we begin to see low levels or deficiency states. So what does this mean for your health? Well as you all now know since covid 19 emerged and researchers announced, that vitamin d is extremely important for your immune system function, aswell as bone health and mental health. Health practitioners like myself have been prescribing vitamin d to assist immune function for a looooong time. A vitamin so important it actually functions more like a hormone. 04.01.2022 Happy new year! Belated i know but better late than never. Actually the reason it's late is because I was feeling very positive about 2021 only to have my positivity shut down by over dramatised media on new years eve about Covid19. I get so cross at the way the media invoke absolute fear by their delivery of some small facts that they embellish the hell out of! We all know covid is here, we've dealt with it all year. It's been an extremely tough year for most whether that w...as due to loss of work/income, inability to connect with friends and family, work overload (yep that happened to some industries in particular) or even the stress of potentially contracting the virus. On a personal note, this was a HUGE year for me, working more than normal full time hours for 6 months of the year and home schooling 2 children was an absolute challenge. But I did it. It broke my heart to see my kids struggling at times, it broke my heart to see people at work everyday dealing with extreme isolation, crying because they couldn't see there families or even just crying because of the sheer thought of catching covid19. The virus changed people, some for the better and definitely some for the worst. Social media sites designed for community connection became warzones full of bitterness and hatred. I distanced myself from social media for that purpose. So now we are JUST on the otherside of this virus, using our new coping mechanisms to navigate our way through the complete unknown in 2021. I myself have big things planned for 2021, I have new tools, more resources and a whole lot of determination to put into my families and my clients well being. I'm also going to do my best to step up in the social media department....keep an eye out for my monthly topics, its time to get serious. 01.01.2022 This is a super easy and super yummy sauce that i have been making for a loooong time. I usually make a batch and freeze it, just to make it even easier! I use this as a vegetarian pasta sauce, a pizza base sauce, parmigiana sauce, base for ratatouille...it's that versatile. Your welcome. 1 medium onion diced 2 cloves garlic crushed Olive oil... 1-2 medium/large tomatoes diced Dried oregano 2 heaped tbsp tomato paste Shallow fry onion and garlic in olive oil until soft, add tomato and simmer for 15 minutes. Give it a frequent stir and a bit of a mash while simmering. Remove from heat, stir through a tsp or so of oregano and the tomato paste. Done.

01.01.2022 Isolation is the perfect time to get your kids in the kitchen! This is a pic of my eldest son who hasn't needed much encouragement at all to get in there and get creative. Most of his amazing creations have been pretty sweet but this isn't such a bad thing in a balanced diet. I know it can be annoying (and messy) with kids in the kitchen but encouraging them to play with food creates a really healthy attitude towards eating. Kids are definitely more likely to eat the food if ...they've played a role in the preparation and cooking.
