23.01.2022 Chimichuri Sauce: great with all cuts of beef as a sauce or marinade. Not to mention it’s an easy one to throw together to impress at your next bbq. Chop finely and combine half a cup of coriander, a quarter of a cup of parsley, 2 tbs of oregano, 1 chilli, 3-4 garlic cloves, a quarter of a cup of lemon juice, pinch of salt and half a cup of good olive oil. Mix it all up and pour it on.

21.01.2022 We tried something new tonight and smoked this butterflied chook on the Kamado Joe using KC Butt Spice Rub. 3 hours at 225F seemed to do the trick.
