22.01.2022 The Windsor Ale, happily clad in sheepskin (not one of ours!), blopping its way through a midwinter week in Tylden. The krausen is already over an inch high, and growing, after less than 24 hours of fermentation. This brew is such a feast for the eyes, ears, nose and in time, throat It won’t even need to be refrigerated

17.01.2022 Day #2, and the Windsor Ale is up n at em Enjoying its fur coat no doubt, like all good Windsors. The Krausen is now at a solid inch and a half and rising I dreamt last night that this brew had blown the lid off the fermenter and melted the airlock, and was still a sublime brew.... Dreams do come true sometimes

08.01.2022 Bottled the Windsor ale today after 12 days of fermentation. In that dozen days it went from an Original Gravity of 1080 to a final gravity of 1022. With bottle conditioning she should end up at around 8.6%ABV, so certainly a destination as opposed to a journey beer I was reading Edition #14 of What’s that Smell?, Tylden’s premier home brewing blog, and the editor was talking about the sad passing of the tallie in Australian beer culture. So I’ve bottled this toe curler into vintage 750ml (or Imperial equivalent) Aussie beer bottles Sampling around the end of August
