23.01.2022 Henry's rum collection now includes Plantation rum Peru! Distilled in column stills at the Destilerias Unidas S.A. de Peru, in the Chicama Valley, an extremely arid region on the Peruvian north coast. This 2004 vintage is first aged 12 years in Peru and then matured 2 to 3 years in France. On the nose it starts with caramel, ripe figs - both the fruit and the leaf, licorice and molasses. It becomes fruitier with banana, almond and ntes that are woody, buttery, minty and smoky.... To taste the rum, (which we highly recommend!), is rich and quite woody, it lingers in the nose with notes of cooked apple, lemon, mango and walnut, at the same time it is spicier with hints of white pepper, vanilla and nutmeg. 01.01.2022 Henry's Rum notes: Another addition to the bar at Seabean is Plantation Xaymaca Special Dry. It evokes the name given to the island by its first inhabitants, the Arawaks. This nectar is a return to the origins of Jamaican rum, in all its complexity and intensity. With Xaymaca Special Dry, Plantation revives the quintessential Jamaican-style, 100% pot still rums of the 19th century with an expression of intense flavors that reveal the traditional, legendary Rum Funk : aro...mas and flavors of black banana and flambéed pineapple. On the nose Xaymaca is very complex, slightly smoky and meaty with fruity, herbal and sour notes building up. Next vanilla come forward, almost pastry-like, with cooked banana, bitter orange peel and ripe pineapple. To taste it is dry, with a more floral and fruitier profile of rose water, soursop, pear, white grape, apricot and sugar-apple. Next some coconut milk, balsam, allspices, bread and nuts.
