16.01.2022 Picky eating. I don’t often post Mr 9’s lunchbox as it’s not as healthy as Mr 3’s (who eats everything and anything). Fussy eating especially in children with autism can present with very narrowed food selections and ritualistic eating behaviours as well as meal time tantrums. Trying to pack a healthy lunch can be a challenge as issues with texture, taste, temperature and feel can be a problem. I try to pack some protein, fruit and veg of some sort (even if it is vege chips!). Way too often food is delivered safety back home, but I know this will get eaten. Little lunch notes help too

10.01.2022 Chicken Vermicelli rice noodle salad. This is my favourite meal to make. Just chop up 1/2 capsicum 1/2 cucumber and grate 1 carrot. Mix in some fresh coriander and mint. Fry 1 chicken breast in garlic and ginger. Serve with vermicelli rice noodles. Make dressing of 1 tab fish oil, juice from 1 fresh lime , 1 teaspoon soy sauce , 1/2 tsp each of fresh ginger and garlic and pour over noodles, salad and chicken.
