These events are always vegan but vary lots in terms of service style, size and location. Many of them are at our venue in Lithgow (Secret Creek) so being based close to there would be ideal. We also travel across the Blue Mountains, to Sydney and beyond. 18.01.2022 One of my fave creative projects for a wedding so far! I built this crescent shaped ceremony arbour using only natural material from inside the sanctuary. No floral foam. Carefully stacked stones and moss collected from the site, a combination of dried and fresh native blooms as well as foliage from the sanctuary. Finished with a few beautiful white accent flowers from @floral.by.nature. (Swipe to get a better idea of the size!) When I do something like this, the biggest challenge is making sure the emus and wallabies dont eat it before the ceremony starts! I am absolutely disgusted to read in the Lithgow Mercury about a local protest that was cancelled because of vile abuse that the organiser received. This is how we know that there is still so much work to be done to dismantle racism and oppression of all kinds. 15.01.2022 Here it is folks. KFC. Kentucky Fried Cauliflower. This dish has been on the menu at Secret Creek since we changed the menu over to completely vegan in 2015. Its actually super easy and the breading spice mix is very versatile. Thats why Ive been fairly generous with the amounts here for one head of cauliflower. Make sure you save the extra spiced flour and use it to crumb whatever else you like in crunchy spicy deliciousness. Youll see that this recipe uses plain flour.... At the restaurant we actually use gluten free plain flour blend to make it more allergy friendly, so it definitely works with either. Plain flour will give you a more dense crumb, and will be closer to actual KFC in texture but if you want to replicate ours exactly, use gluten free! Ingredients: BOWL ONE 1 cup plain flour 1 heaped tablespoon vegan chicken stock powder 1 heaped tablespoon smoked paprika 1 heaped tablespoon sweet paprika 2 heaped teaspoons onion powder 2 heaped teaspoons garlic powder 2 heaped teaspoons dried sage 1 heaped teaspoon ground white pepper 1 heaped teaspoon dried marjoram 1 heaped teaspoon dried thyme 1 heaped teaspoon dried oregano 1 heaped teaspoon mild mustard powder 1 heaped teaspoon celery salt Pinch of salt flakes BOWL TWO 1 cup of plain flour 1.5 cups of water Oil for frying. I recommend rice bran oil. METHOD Preheat your oven to 180 degrees celsius Break a medium sized head of cauliflower into chunks that are a little larger than bite sized. You might need to start off with a knife, but mostly breaking them with your hands will have a better effect. Lightly spray a baking tray with oil, place your chunks on it and sprinkle with a good pinch of salt. Spray the top of them too. Roast in the oven until just golden brown on the edges, but a little firmness remains While the cauliflower is cooling, slowly whisk the water into the flour in BOWL TWO and combine all ingredients in BOWL ONE. Preheat your oil for frying. If you are using a deep fryer, set the temperature to 180-190 degrees celsius. If you are using a pot of oil on the stove, heat the oil to the same temp, ideally using a digital thermometer. Crumb each piece of cauliflower by placing into the wet mix, and then into the dry mix. Fry only a few pieces at a time, being careful that your oil doesnt drop below 150 degrees celsius and stays as close as possible to 180. Fry until brown and crispy. It should only take a couple of minutes. Serve with your fave creamy mayo/aioli type sauce or mash and gravy. If you need a recipe, my chipotle aioli goes great with it. NOTE: Deep frying alternatives are air frying or oven baking. If you would like to do either of these two methods, I recommend, for maximum crunch and colour, that you use the following wet mix instead, whisking the ingredients very well: 1 cup plain flour 1/2 cup light flavoured vegetable oil 1/2 cup soy or other preferred plant milk 1/2 cup water

It will be select days only, rather than set in stone opening hours, to work around the few weddings and special event bookings that we still have going ahead (many have been postponed, which is very sad for our beautiful couples but good news for everyone else!). It will also be BOOKINGS ONLY. Bookings are now open for br...unch/lunch on Saturday the 12th and Sunday the 13th of September, a very special Spring Brunch. It will be a family style service with 5 shared courses using seasonal produce. $40 per head which includes tea or coffee. Bookings are STRICTLY limited due to covid regulations so please get in touch ASAP to reserve a table. We can’t wait to see your lovely faces again! PS. This pic won’t match the special boxes we’re making up just for the occasion but they will contain; vegan gourmet cheeses, a variety of housemade dips, antipasto and marinated olives, fresh seasonal fruit, crackers, bread and other delicious hand m...ade morsels, styled beautifully with fresh flowers. Gluten free is available too! Single people, grab some friends and share the vegan love, you’re allowed special food too! Boxes are $120 and are a very generous amount for two people or could also feed four if you’re double dating. Orders must be in by February 7th and there are only limited boxes available. 14.01.2022 ***REOPENING JUNE 3RD*** We cant wait to see all of your smiling faces! Well be reopening on Wednesday June 3rd and our new opening hours will be; WEDNESDAY - SUNDAY 9AM - 4PM... CLOSED MONDAYS AND TUESDAYS On the weekdays well be serving a casual cafe style menu. Coffee, delicious house made cakes, scones, pies and some other light savoury options. On the weekends, the kitchen will be open serving an a la carte brunch/lunch menu in addition to the pre-made items. Takeaway will be available and well have some eco-friendly packaging but wed love if you could bring your own containers so we arent having too much of an impact on the earth! Well only be able to seat 10 people at a time inside for the moment. We anticipate that this will be increasing to 20 people soon but we welcome bookings if you want to make sure that you get a seat. We are no longer operating as bookings only though and welcome you to just drop in whenever we are open! If you cant get a seat, you can hang out outside and wait for a table or get takeaway. 12.01.2022 Hello friends! How is everyone feeling? We made this recipe video a while back and only posted it on Instagram (go follow us over there if you dont want to miss anything! @secretcreekcafe) just thought wed share here too, now that Fable (the product we use here) is available at woolies! Buf bourguignon INGREDIENTS... 1kg fable foods beef 1 leek, chopped 2 carrots, chopped 2 celery stalks, chopped 5 cloves of garlic, minced 4 French shallots, halved or quartered depending on size 125ml olive oil 750ml vegan red wine - pinot noir recommended 500ml vegan beef stock - liquid 1 extra tablespoon vegan beef stock powder 1 tablespoon plain gluten free flour 2 tablespoons tomato paste Bay leaves Fresh thyme Fresh flat leaf parsley, chopped Ground black pepper Salt 10 shittake mushooms, halved Carrot puree: 4 carrots chopped 700ml water salt 1 tablespoon nuttelex METHOD In a heavy pot heat half of the olive oil. Gently fry fable foods beef until just coloured. Add ground black pepper and vegan beef stock powder. Fry briefly and then remove from pot. In the same pot, put the rest of the oil and return up to heat. Add leek, carrots, celery, garlic and shallots. Add a pinch of salt. Fry until coloured. Add gluten free flour, stir until all vegetables are coated and continue to fry until ingredients begin to stick to the bottom of the pot. Add half the red wine, stir well. Add bay leaves and thyme. Bring to the boil, add remaining wine, tomato paste and liquid beef stock then reduce heat to a simmer. Stir frequently and slow cook for approx. 1 hour. While this is cooking, in another small pot, place chopped carrots, water and salt into a small pot and boil until soft. Remove from heat, add nuttelex and puree until smooth. In another pan, saute shiitake mushrooms with nuttelex on a high heat with a pinch of salt until cooked very well. When the vegetables in the main pot are cooked and sauce is thickened, return beef to the pot, add sauteed shiitake mushrooms, carrot puree, and fresh parsley. Stir well to combine all ingredients and heat through. Add extra salt and pepper to taste if necessary. Serve with mashed potatoes or a warm buttered baguette.

11.01.2022 Hello friends! Thank you all so much for the support over the past month. We loved seeing you all again and feel so grateful for all of you. Unfortunately weve realised that it is still not sustainable for us in the cafe to remain open at this stage. Weve decided to close again until we are able to safely run events. Even if we were allowed to (which we arent) we just dont feel comfortable trying to fill our venue to capacity at the moment, which is what we essentially ...need to do to be profitable. The sanctuary will remain open for booked tours only and they can be booked in advance via their website www.secretcreeksanctuary.com. Please remember that this business is run separately so youll need to contact them for any enquiries about tours. Even with the huge amount of support weve received, a la carte cafe service just doesnt work for us right now. Thank you so much for your understanding. This is an unprecedented situation and weve been doing our best to navigate it in a way that ensures the longevity of our business. We dont want to operate from a place of emergency and scarcity and make decisions that only serve the short term. As a business, are here for the long haul and we have a lot of huge things in the works for the future. The future of vegan food needs us to look at the big picture and thats what we are doing when making this decision. Saying that... a couple of ways to access us and our food will remain available; 1. Private degustation parties at your house. Get in touch if this is something you like the sound of. Minimum of 15 people. We can also travel within 2 hours for these. Uh...hello Sydney folks!? 2. Weddings and other events. We have super limited availability for any more events in 2020 (basically booked solid from September, which is amazing!), but are taking bookings for 2021 and into the future. Closing the cafe for now will mean that we are also more available for our current clients, which is something we are super grateful for. 3. Online content. Were not going anywhere. Were just going back into hibernation for the moment. Well share recipes and other content when we can. We really do love you all lots and thank you for supporting us through this. Please remember to be kind and compassionate to those people working in hospitality that have to push through during this time. 08.01.2022 Hello! Some you might know me as Bob, my name is @balthazar_ossig_bonanno on instagram. I sometimes cook at Secret Creek, and I always cook at home. Im at home at the moment and heres something I made... let me know if you like it! Ingredients 1.5L Water 4tsp Vegan beef stock (Massels)... 500g Button Mushrooms 2Tbs oil 1 Onion 4 Garlic cloves cup sweet soy sauce 1tsp Worcestershire sauce tsp smoked paprika 1tsp pepper pinch salt pinch chilli flakes 2Tbs pine nuts 1.Add 1.25L of water and 3tsp of stock powder to a pot 2.Chop mushrooms as thin as possible and boil for 30mins 3.Chop up onion and garlic 4.Drain mushrooms and add to fry pan with oil and onion 5.Cook on high, add garlic 3 mins later. 6.Add the rest of the ingredients, once it start sticking, stir constantly while adding splashes of water until you have nice crispy edges. 7.Toast pine nuts 1 min before you turn off. The weekday menu will be a small range of freshly made savouries, soup, pies, pastries, plus sweeties from the fridge, scones and muffins. It will change daily and be designed around our seasonal produce. On weekends well be serving a larger brunch/lunch style a la carte menu from the kitchen. Were really looking forward to seeing you! Bookings are no longer essential (because events arent happening for the time being) so you are welcome to just drop in during opening hours. Weve started some maintenance jobs that we are going to finish up first. 01.01.2022 First weekend back started out strong! Big veggie brekkies all day long. With tofu scramble on toast, housemade spiced baked beans, roasted heirloom tomato, spinach and sauted mushies. 01.01.2022 ***Closed Thursday*** Hello, just a little note to say that well be closed tomorrow (Thursday 2nd July) as a one-off. But well be open Friday, Saturday and Sunday this week. We do like bookings and sometimes if you dont book, we might not be able to fit you in! Although its not considered to be one of the essential vendors, I also think having an MC is a really good idea regardless of the size of your group. 01.01.2022 Hello friends!! Good news! Spring is finally on the way and so were coming out of covid hibernation. Well be running seasonal set menus on select days. It will be select days only, rather than set in stone opening hours, to work around the few weddings and special event bookings that we still have going ahead (many have been postponed, which is very sad for our beautiful couples but good news for everyone else!). It will also be BOOKINGS ONLY. Bookings are now open for br...unch/lunch on Saturday the 12th and Sunday the 13th of September, a very special Spring Brunch. It will be a family style service with 5 shared courses using seasonal produce. $40 per head which includes tea or coffee. Bookings are STRICTLY limited due to covid regulations so please get in touch ASAP to reserve a table. We cant wait to see your lovely faces again! PS.
