03.01.2022 The Section28 Monforte is our flagship cheese. It is handcrafted in very limited quantities from the best milk produced by the dairy. It is a raw milk, semi-hard cheese made using the traditional methods of the Alpine regions of France. This gives it a complex, but not overpowering flavour which is initially sweet and milky, but balanced by emerging brothy and roasted nut flavours.
