11.01.2022 Cabernet picked late at night along Seaview Road, McLaren Vale. Old vines (70+ years) that were hard to estimate the yield. Fortunately there was 1.2 tonnes to grab and then crush, from a warm year of low yields so I was hugely excited to get the Fruit. Dark, concentrated grapes with developed tannins, The Seer had begun. With Seven Dials Wines the importance of the Clock and hence timing is central to The Seer.

07.01.2022 With so much colour and flavour with solid tannins in the grapes, the Cabernet Sauvignon was only pumped over twice a day, morning and night. A cool ferment bouncing between 20 to 23c the yeast happily went to work and the extraction progressed well. So much so that I change the process to only hand plunged for the last 3 days to get softer extraction and retain subtle aromatics in the wine. Pressing was interesting, the free-run was bright cherry and blackberry flavours with soft structure while the pressings were blueberry and firmer tannins, together they balanced out the framework of The Seer.
