24.01.2022 Home-made hollandaise, atop my all time fave breakfast, Eggs Benedict. 4 egg yolks, lemon juice, water, a pinch of salt, and more butter than you would ever want to know about...better than anything store bought!



21.01.2022 Probably should've taken the photo before I dug in but I just couldn't wait! Fresh eggs also make the best Pavs (thanks Donna Hay for that little tip, I had always used older eggs...). Yummy marshmallowy centre and perfectly crispy meringue on the outside. Mmmm!

Whether it's putting a thousand rivets in the new chicken caravan by hand, moving the caravan after dark in freezing conditions, putting up and pulling down electric fencing, collecting and delivering eggs, and topping up food, water and treats...The things you do for love! And in return we keep him well fed on scrambled eggs, poached eggs and quiche

05.01.2022 The humble poached egg. Want to know the trick to poaching the perfect poached egg? Nothing fancy required, no vinegar, no swirling water, no special spoons, pots or poachers... Just really fresh eggs! Yep, as simple as that! Took me a long time to realise why my supermarket bought eggs just wouldn't poach properly. Fresh eggs hold their white together making it so so easy. Crack into gently simmering water, simmer for a few minutes, don't let it boil, and voila! Breakfast is served!
