This delicious food is made from soft roasted eggplants cooked with tomato sauce and lots and lots of garlic with eggs cooked into it at the end. It is one of the best and most popular stews in Iran. It is a dance of flavours! Sweet and Sour at the same time. You might not normally think to make a sauce with walnuts and pomegranates paste and honey, but its the perfect combination for this unique dish! Fesenjan can ...be made with variety of meats, chicken, meatballs, duck meat and etc and the the sweetness/sourness of the dish can vary depending on which part of Iran its being made. The people from north of Iran tends to have this dish quite sour and pretty much without any sweetness. Thats mainly because the weather in North of Iran is perfect for citrus type trees and people tend to cook their dishes with higher acidity. In Esfahan, on the other hand, the same dish is normally cooked ultra sweet!
