21.01.2022 Bone broth is cheap and simple to make and is incredibly nutritious, helping to build our Blood and Qi. This allows us to have enough energy, sleep well and to keep our immune system strong and able to fight off bugs and viruses. To make the broth I add free range or organic chicken carcasses and veggie scraps. I also add herbs and spice, in this batch there is bay, parsley and some garlic. I use spring water and add 1 tablespoon of apple cider vinegar, which helps to remove... all the minerals from the bones. The broth then bubbles away on a low heat for 24 hours. I then strain and keep in the fridge. The broth is added to soups and stews, I use it to cook rice to make a pilaf. You can also make a very simple broth by adding grated ginger, garlic and tamari. I keep the chicken carcasses and veggies scraps in the freezer until I have enough to fill a big pot.

06.01.2022 I am passionate about using food as medicine and as mandarins are in season my kids are eating a lot of them, I dry the leftover peel to store and use in teas. People have used citrus fruits as a source of medicine for thousands of years; we all know to use ginger and lemon when we have a cold. Traditional Chinese medicine also uses the rinds. In Chinese medicine dried mandarin peel is called Chen Pi. Mandarin peel is perceived to have a pungent, bitter flavour and a warmin...g action energetically. It interacts with the Spleen, Stomach and Lung meridians, and has three primary functions in traditional Chinese medicine; it circulates the spleen and stomach qi, or energy, and strengthens the spleen. Helps with nausea and vomiting and can be used to help phlegm congeal, reduce cough and ease discomfort in the chest and diaphragm. Keeping the Stomach and spleen energy strong during winter is vital as when these organs are weak the body can be vulnerable to catching coughs and colds and to producing excess mucous and phlegm. Do not use Chen Pi if there is a dry cough, coughing of blood or yellow sticky mucous. You can steep 1-2 teaspoons of mandarin peel in boiling water for 15 minutes, you could add other herbs, such as hibiscuis, elderberries or flower and ginger to make an infusion. Add some raw honey to taste.

I am also running telehealth Chinese medicine appointments and I am currently doing a special on initial appointments. Initial appoints last for an hour and includes a diagnosis interview, I will then provide you with dietary and lifestyle advice, I may prescribe moxa warming therapy or supplements and herbs to take. I will give you some acupressure poin...ts to do at home. Initial appointments cost $90 but I am currently offering a $20 discount for appointments booked in September.
