21.01.2022 A great way to celebrate WA as we head into Autumn is to use some of the amazing produce that's in season right now! Bravo Apples and persimmons are in season right now, so why not take advantage of the freshest produce and get baking with this delicious Apple & Persimmon Crumble (as heard on News Talk 6PR 882 this afternoon with Mark Gibson *APPLE & PERSIMMON CRUMBLE* ... Filling 6 x Bravo apples 4 x Fuyu persimmons 1/2 cup caster sugar 1/2 cup brown sugar, lightly packed Juice of half of lemon 2 tsp ground cinnamon 1/4 tsp ground cardamom 1/4 tsp ground nutmeg Crumble Topping 1/2 cup plain flour 6 tbsp cold butter cut into small cubes 1/2 cup brown sugar, lightly packed 1/2 cup caster sugar 1/2 cup rolled oats 1/2 tsp ground cinnamon 1/2 tsp salt THE HOW TO: Preheat oven to 180C (350F). Cut the apples into quarters, remove core and slice into 0.5cm slices. Slice persimmons into quarters, remove the seeds and then slice into 0.5cm slices. Place the apples, persimmons, sugar, lemon juice, cardamom and cinnamon in a large bowl and mix to combine. Transfer to a 1.5-litre-capacity ovenproof dish. To make the crumble topping, combine the cold butter cubes, flour, sugars, salt and cinnamon together in a large bowl. Use your hands to rub the butter into the other ingredients until coarse crumbles form (about the size of peas). Then add the oats and clump together. Spoon the crumble mixture over the apple and persimmons and place the dish on a large baking tray. Bake for 4045 minutes, or until the crumble is golden and the apples and persimmons are soft. Serve with ice-cream. Serves 6.
