If you’re looking for a fun twist on your weeknight dinner in less than 15 minutes, try our pancetta-wrapped garlic and lemon pork cutlets ... 2 tablespoons olive oil 2 garlic cloves, crushed 2 tablespoons lemon juice 4 (about 250g each) pork cutlets, rind off 4 thin slices lemon 8 thin slices mild pancetta cup store-bought basil pesto Grilled ciabatta bread and rocket leaves, to serve 1. Preheat oven to 200C fan-forced. Combine 1 tablespoon oil, garlic and 1 tablespoon lemon juice in a shallow ceramic dish. Add pork and toss to coat. Refrigerate for 15 minutes. 2. Place pork onto a clean work surface with a lemon slice on each. Wrap around the pancetta and secure with a toothpick. Repeat using remaining pancetta and pork. 3. Heat remaining 1 tablespoon of oil in a large non-stick frying pan over medium heat. Add pork and cook for 2-3 minutes each side (turning carefully) until golden. 4. Place pork onto a baking tray lined with baking paper. Roast for 8-10 minutes or until just cooked through. Cover loosely with foil and set aside to rest for 5 minutes. Drizzle basil pesto over pork. 17.01.2022 Dinner inspiration from @australian_meat_ind_council Ossobuco, Italian for bone with a hole, is a specialty of Northern Italy of cross-cut veal shanks braised with veggies, wine and broth. This dish has become a household favourite all around the world for its ultra-tenderness, and rich flavoured gravy. Here’s our recipe for a melt-in-your-mouth ossobuco:... Buy 1.5kg ossobuco from your independent local butcher, and bring to room temperature before cooking. Toss veal pieces in seasoned flour, then sear in a large frypan with a little olive oil until browned and crusty. Place to one side. Dice two carrots, two celery stalks and one large onion, then sauté in the same frypan with a little more olive oil until softened. Crush in a few cloves of garlic and a sprig of rosemary for the last 30 seconds, before transferring it all to a large, ovenproof casserole pot. To deglaze the frypan, add 300ml red wine (a glass for yourself of course) and stir, scraping up all the delicious crunchy bits off the bottom for two minutes before adding two tablespoons of tomato paste, one tin of tomatoes and two cups of beef stock. Once combined, pour into the casserole pot with the ossobuco pieces placed on top of the veggies. Cover tightly and cook in the oven at 150c degrees for 4 hours. Once out and slightly cooled, add a touch of cornflour to thicken sauce if needed, before serving with creamy mash or polenta, and a crusty loaf of bread.
