25.01.2022 Yep, it’s that time of the year where we take a break. We are trading until 2.30pm today and tomorrow for last minute gifts. Our kitchen will close at 11am Christmas Eve. But we will be open for coffees, coffee beans and last minute gifts until 2.30pm. We will be drawing the winner of our $4000 Christmas Give Away package around 12pm today. So stay tuned! 25.01.2022 Silipo Coffee are on the hunt for 2 new staff. 1st position Head Barista/Manager. We are looking for someone that has at least 3 years experience in the specialty coffee. Is proficient in Latte Art. Can take charge and can handle a high volume of work. ... Duties will include opening our roastery’s espresso bar, stocktaking, managing our POS system, training of other Barista’s to our standards and maintaining our cleaning roster. The successful candidate will need to have a bubbly and fun nature and can work in a team environment. The position is for 30-40hrs to start and Full-time could be offered to the right person. You must have availability from Monday to Saturday. Penalty rates extra on Saturday. But position is mainly only week days at the moment. 2nd position will be a junior traineeship which will include all duties of a cafe, helping out the baristas, chefs and coffee roasting. You we learn invaluable experience in this roll and depending how far you wish to go you will end up with qualifications of possibly a Barista, Cooking/Baker and/or Coffee Roasting. A few years later Jacob came on board with the Silipo team and is regarded as family now a days. Jacob is intelligent, funny, talented and an all round great guy! 24.01.2022 Let’s talk Puqpress! How do you set it up and use it correctly? First of all you will have to set it. The easiest way to do this is get your recipe perfect with using your hand tamping. > > Step 1. Grind 21g into your basket ... Step 2. Distribute the ground cofffe all the way to the edges with out pushing down at all in any place. Step 3. Using a tamper that fits your basket and machine correctly. Press down tamping the coffee with a nice firm push but not as hard as you an. Step 4. Flush your group head for approximately 1-3sec and place tamped group handle in the group head. Step 5. Start extraction and time your shot. If you get what your aiming for. Say 32sec for your set dose. And that is your aim? You are good to go to the next step. Of your extraction was to fast or slow adjust your grinder accordingly and try again until it’s a perfect extraction. No it’s perfect. Let’s move onto dosing another 21g evenly distributed in your group handle. This time we’re going to use the Puqpress. We time the extraction and let’s say we get 29sec? This tells us we need to tell the Puqpress to push a little harder to match our hand tamping. So you need to adjust your Puqpress to more pounds per pressure by 1 setting and repeat until you get to the extraction becoming 32sec. Once this happens, you have now set your Puqpress to your own hand tamping pressure, to your recipe and all Baristas will now get the same result when weighing the right dose, and distributing. If you don’t level this hill of coffee grinds by going North, East, South and West before tamping. You are seriously under achieving what your coffees maximum potential can be. As you can see in this pic. By not doing so, this will leave you with a very dense spot in the centre of your coffee. Allowing the water to flow aroun...d the outside of the basket and not evenly through your coffee. We refer to this as channeling. It is not what you want your coffee doing! Of course the coffees had to be sustainable, ethical and specialty graded. They had to have flavours that resembled a traditional Christmas pudding. 02.01.2022 SC would like to introduce you one of the most interesting coffees we have bought to date. This is a Colombian coffee which has been sourced via @cropdelmonte it is from a Farm called El Placer in a town called Carlaca. We call it Colombian Calarca! It is grown at 1590-1740 m.a.s.l the farmers name is Sebastian Ramirez. It is a semi washed 120hr coffee. This nano lot has been treated with double fermentation. Firstly, an anaerobic fermentation for 48hrs with addition of must..., a juice taken from Pink Bourbon fermentation. The aim with this processing is to explore a new dimension of flavours with distinctive notes such as guava and white chocolate, and aromatic notes such as Basil, Rose and Ginger. Furthermore, it has a second fermentation for 72hrs after being pulped leaving considerable amount of mucilage on the bean in order to achieve a delicate juicy sensation, intensifying its floral notes, while maintaining a medium acidity, finally after the development of lactic acid, the washing gives this coffee a creamy and pleasant finish. This coffee is not to be missed! It is available now online. Link in bio. I have been in coffee 26 years and have yet to try something as unique as this coffee. Recipe is 20g in 40g out over 28sec. We say respect this coffee and have it as an espresso or long black.
