24.01.2022 My dad always looked forward to picking his first ripe tomato from the garden by Christmas! Tomatoes are even naturally in Christmas themed colours. . I just love fresh, ripe, juicy home grown tomatoes. 21.01.2022 Merry Christmas and Happy Birthday all in one. Today is my brother's birthday so we celebrated Christmas and his birthday in one! I was very happy with my cake creation today, the texture was just right. I swapped out some of the flour for almond meal and topped the cake with fresh strawberries we bought in Beechworth earlier in the week. The almond meal makes the cake moist and dense. The baked berries become intense with sweetness and flavour . RECIPE 100g unsalted butter ...1/2 cup sugar 1/2 teaspoon vanilla bean paste 2 eggs 1/2 cup almond meal 1 1/2 cups self raising flour 1 cup milk 12 strawberries, halved Icing sugar . Beat the butter and sugar until creamy, then add the vanilla and eggs continue to beat and gradually add the almond meal, flour and milk until it forms a batter. Pour into a greased and floured 20cm round cake tin. Place the halved fresh strawberries over the top and bake at 180 degrres for 30minutes. . Once cooled drizzle with icing or sprinkle with icing sugar. . 20.01.2022 It is that time of year, festivities and food! I know if I eat out too often I don't feel well so a strategy is needed for the long haul! . A few reminders work for me 1. You wont miss out if you don't try everything 2. Don't go too hard on the nibbles at the start (I mucked up the other night and went too hard on the bread and dips!), all about pacing!... 3. Order dishes to share, then you can have a taste of a few different dishes without having to eat all 4. Choose a salad or a dish with plenty of veg. My gut feels much better if I am eating out numerous times in a few days when I do this. Eating out is not a reason to be served poor quality food. It is ok to want nourishing food that is tasty. 5. Of course, enjoy, it is the whole year that counts for health not a few days. Most importantly enjoy the company like I did today... the awesome passionate, fun, smart 'A' team I work with! What does that look like? 1 cup salad = 1 serve 1/2 cup cooked vegetables = 1 serve 1/2 cup cooked legumes =1 serve . Despite the latest studies and recurring healthy eating messages only 4% of Australian’s are eating enough vegetables each day. The average person eats only around 2 serves a day, which is the... inspiration behind Tryfor5. . Eating veggies doesn't need ro be boring. This home made schnitzel sandwich has potatoes for home made chips roasted carrots lettuce cabbage for a homemade slaw onions sweet potato . This meal should tick off 2 or 3 serves and you have only a few more to go. 14.01.2022 Spring time perfect season- warm, comforting type food one day when it feels like it is still winter and lighter foods the next when you get a sniff of summer! That is how I feel living in Melbourne and as much as people joke about Melbourne's crazy weather, (4 seasons in one day) that makes it interesting when it comes to food. You can have a hot roast dinner or steaming hot bowl of soup with apple crumble one day and then a piece of freshly grilled fish and salad or a barbe...que with sorbet the next! 13.01.2022 It is AFL Grand final time and this year is a time for me to reflect. There isn't 'next year' now that I have finished @hawthornfc and I realise how lucky I have been to enjoy 4 of these grandfinal weeks and 3 premiership wins. . Over the 12 year journey I have met lots of fantastic people, from players, medical, property, training, media, marketing and footy department staff. I am not sure I will miss the smell of sweaty players in the office but I will miss the music pu...mping in from the gym, players barging in and when they make me laugh, but it is time to move on! . 08.01.2022 On top of the world... maybe not quite, but on top of Australia! On the return work trip from Canberra, my daughter and I stayed in Thredbo a night and did the walk up Mt Kosciuszko. It was a 13km round trip (the chair lift takes you part of the way up) with a well laid out wide track. Well worth doing. It was so lovely to be outdoors, thinking about just what we were doing, really in the moment which can be hard to do in the businesses of everyday routine. . 04.01.2022 Eggs are my go to when I want to use up left over veggies and I dont feel like eating meat. If you are looking for a meat free tasty dish this fritta I made last weekend went down well. It never turns out quite the same as I just guess as I go depending on what I have in the fridge. This one has: . INGREDIENTS 4 eggs, whisked 3/4 cup tasty cheese (sometimes I mis in some mozarella and parmesan)... 1/2 brown onion chopped finely 1/2 red capsicum, chopped finely 1 large flat mushroom (or 3 button mushrooms), sliced 1/4 cup milk 1/2 cup pumpkin, thinly sliced 1 teaspoon fresh oregano 1 corn cob, kernals sliced off . METHOD 1. Fry the onion, capsicum, corn and mushrooms in some olive oil until lightly browned 2. Cook the pumpkin in the microwave or fry in the pan until just cooked. 3. In a bowl whisk the eggs and add in the cheese and milk. 4. Grease a baking dish. 5. Line the bottom with the thinly sliced pumpkin 5. Pour the fried vegetables evenly into the dish over the pumpkin 6. Pour over the egg mix. 7. Sprinkle with the oregano. 8. Bake in 180 degree oven for around 20 to 30minutes . Serve with a green salad. 02.01.2022 39% of Australians say they cook more now than pre Covid (according to AB Food Study by YouGov) that's a good thing! . As I sit with my lap top on the verandah this morning I could hear some children walking to school counting their steps.... 98, 99, 100! As kids go back to school in Melbourne here's hoping getting back to routine includes time for making breakfast at home. . Making my cereal, yoghurt, fruit and milk might not be what you call cooking but it is still a meal... prepared at home. We know that we are more likely to eat less salt, less saturated fat and more fruit and vegetables in our home prepared food. Tick on the health front. . 02.01.2022 Home made meat pies, a tradition on AFL grandfinal day in our house! I slowly cooked the rump steak, with finely chopped carrot, onion and celery with tomato paste, Worcestershire sauce and a dash of Vegemite! I topped them with a square of puff pastry (so there isn't too much pastry) and they were devine. Served along with an array of roast veggies it is one hearty, nourishing meal! . It is really nice to have food traditions. The other one for grandfinal day is my daughter ...ices cup cakes them with the teams colours. I baked them freshly this afternoon and can't wait to bite into one at half time! .
