18.01.2022 I love discovering new ingredients and this week I have the pleasure to cook with a local, family grown and manufactured product, #simplygreentomatoes. I have ...found the flavour profile to be similar to artichoke, with a little more crunch and a little more tart. The tomatoes are packed in olive oil with a touch of oregano making them perfect for antipasto or pairing with Mediterranean flavours. So far I have combined them with olives, lemon and grilled zucchini for a winning side. And tonight I layered potato, leek and simply green tomatoes into a delicious cheesy frittata - so yum! I picked up the micro basil from Clumsy Goose Greens and this complimented the tomatoes nicely and added another layer of freshness and flavour.
