25.01.2022 Salt bush. I love the color, texture and taste of these two! The first is grey salt bush (although its looking pretty green in the photo) and the other is sea berry salt bush. I use the leaves of the first to flavour a number of the courses we have as part of the feast. Ive used the berries of the second to make a cordial. 24.01.2022 Just back from a forage, the ground is drying out a bit so I expect the wild asparagus to really kick off in the next couple of weeks. Got a few bunches for you tomorrow @farmgatemarket. Still having difficulty sourcing foil pie trays so only a couple of crostata this week, sorry. The triangle garlic and fennel frond kraut is a real treat, if you are into zingy, kickin’, spicy kraut! Only a few jars so once it’s gone, you know the drill! Have put fresh saffron milk caps into ...the wild mushroom faux gras, it’d be a crime not to! Have saved a few fried and they’ll end up in the brodo. Will have a few fresh, along with some slippery jacks, get in early if you would like them. Lots of fresh pasta, gnudi, both chilled and frozen, hand made and blanched gnocchi, sauces and lots of meals ready to heat and eat. While domestic ones have been popping up for a few weeks, the wild ones I forage for have been a bit slow. The wait is over, I’ll have (a few) bunches for you on Sunday! How many? 19.01.2022 Pork and cabbage rolls, one of my faves, problem is, I’ve always got some cabbage left, normally the heart. Leaves are too small to make rolls with. I hate waste and I think the chooks are over them as well. @siljawiggy suggested I have a go at fermenting a kraut and graciously volunteered to to act as official taste- testers (big of her, right?) anyway, a dozen or so batches later, Ive finally managed to keep some back and you can get some this Sunday @farmgatemarket. This ...one is flavoured with wild fennel, caraway and juniper berry. Only a few bags this week so get in early if you’d like some. 18.01.2022 Sagg, aka spiny headed mat rush, basket grass (Lomandra Fongifolia), is something that we see regularly on our forage and feast adventures. The leaves are used to weave fine baskets and you can chew the base of the stems for water. I’ve also read that the seeds came be ground to make flour that’s mixed with a little water and baked in the coals. The one sagg that I have in the back yard hasn’t been very prolific though. Found out that’s because they are dioecious, that is ...you need both male and female plants to get seeds! Found a lot of sagg yesterday when collecting fennel flowers and decided to give it a go! I’ll let you know the end result! Come along on one of my adventure tours to learn more and then sit down to a delicious 6 course lunch with matching wines. 09.01.2022 The thing about foraging, it makes you slow down a bit and take notice of what’s around you. I noticed a couple of artichoke plants growing in a paddock and have been keeping an eye on them. Did a quick harvest yesterday arvo and came up with a handful of flowers. Decided to confit them, loaded a pizza with them last night and popped what I had left into a couple of jars. First in, best dressed @farmgatemarket tomorrow. Also have a jar of asparagus sotto olio. 01.01.2022 No market for me this weekend, using the time to do a couple of things. This pink liquid is what I get after doing a batch of wild asparagus. The liquid is clear to start! Popped the pickled asparagus into jars with some garlic and chilli, covered in olive oil, Nona’s asparago sotto olio! I’ll use these for upcoming forage and feast tours. The wild garlic kraut has turned out to be a delicious condiment, complements the Angasi oysters from @theoysterprovince beautifully. Al...so having a little play at canning some fresh oysters. Found a method on line, seems pretty straight forward so why not! While I don’t have a pressure canner, I do have a pressure cooker that runs at the pressure I need so let’s see.
