INGREDIENTS 2 c. fresh or frozen breaded chicken, cooked according to package instructions and diced 1/3 c. honey... 1/3 c. low-sodium soy sauce 1 tbsp. sesame oil 1 tbsp. rice wine vinegar 1 tbsp. light brown sugar 1 clove garlic, minced 1/4 c. sesame seeds DIRECTIONS 1. Prepare chicken according to instructions. Cover chicken tightly to keep warm. 2. Make the honey sauce: In a small pan over medium heat, combine all remaining ingredients except sesame seeds. Bring to a boil, then reduce heat to a simmer. Simmer until slightly thickened, 1 to 2 minutes. 3. Pour over warm chicken and toss to fully coat. 19.01.2022 Penne With Summer Veggies INGREDIENTS 1 small eggplant, diced 1 medium zucchini, diced... 1/2 pt. grape tomatoes, halved 3 tbsp. extra-virgin olive oil kosher salt Freshly ground black pepper 12 oz. penne pasta 3/4 c. grated ricotta salata, plus more for serving 1/4 c. finely chopped fresh basil, plus more for serving DIRECTIONS 1. Preheat oven to 425. 2. Arrange eggplant on one half of baking sheet and zucchini on other half. On another baking sheet, arrange tomatoes. Drizzle vegetables with olive oil and season with salt and pepper. Toss to combine, then roast vegetables until golden, about 20 minutes, stirring halfway through. 3. Meanwhile, in a large pot of salted boiling water, cook penne according to package directions until al dente. Drain, reserving 1 cup pasta water, and return to pot. 4. Remove vegetables from oven and scrape into pasta using spatula. Add ricotta salata and cup pasta water, stirring to combine. (Add an additional cup liquid to create a creamier pasta, if desired.) 15.01.2022 Spring Asparagus and Mushroom Papardelle INGREDIENTS kosher salt 1 lb. pappardelle 3 tbsp. extra-virgin olive oil... 1 lb. baby bella mushrooms, sliced into 1/4" pieces 2 cloves garlic, minced Freshly ground black pepper 1 c. vegetable stock 1 lb. asparagus, chopped into 1" pieces 2 tbsp. butter 1 c. freshly grated Parmesan, plus more for garnish 1 c. freshly grated fontina cheese 1/2 c. parsley leaves DIRECTIONS 1. Bring an 8-quart stock pot of water to a boil and generously season with salt. Cook pasta according to package directions until al dente. Drain, reserving 1 cup pasta water, and return to pot. 2. Meanwhile, in a large skillet over medium-high heat, heat oil. Add mushrooms and spread in an even layer; cook for 3 minutes before stirring to let the mushrooms brown. Add garlic, season with salt and pepper, and cook 2 minutes more. Add stock and asparagus, then using a wooden spoon, scrape bottom of pan to remove the browned garlic and mushrooms. Bring to a boil and simmer for 5 minutes. Add butter, pasta, and both cheeses, then gently mix with tongs. (If the pasta seems dry, slowly add reserved pasta water until desired consistency is reached.) 3. INGREDIENTS 1 1/2 lb. fingerling potatoes or new potatoes, halved or quartered lengthwise if large (about 1" thick) 4 butterflied pork loin chops (about 2 lbs. total)... 1 tsp. coriander kosher salt Freshly ground black pepper 2 tbsp. extra-virgin olive oil, divided 1 tbsp. honey 1 tbsp. Dijon mustard 1 tbsp. capers 1 tbsp. chopped fresh parsley, plus more for garnish 1 tbsp. white wine vinegar DIRECTIONS 1. Fill a pot with 1" water and set a steamer insert inside. Bring to a boil and add potatoes to the insert. Cover and steam potatoes until you can easily insert a fork into the center, 18 to 22 minutes. 2. Meanwhile, season pork on all sides with coriander, salt and pepper. In a large, non-stick skillet over medium-high heat, heat 1 tablespoon oil. Cook the pork in batches, turning once, until golden brown and almost cooked through, 6 to 8 minutes. Spread in an even layer on a baking sheet and bake for 15 to 20 minutes, until mostly tender. 2. Meanwhile, prepare salmon: In a large bowl, whisk together mustard, maple syrup, lemon juice, garlic, and red pepper flakes. 3. Season with salt and add salmon fillets to mixture. Toss until fully coated. 3. Remove vegetables from oven and push to one side of baking sheet, then add salmon fillets skin side down to the empty side of the skillet.
