19.01.2022 Botany Weisse Apricot featured in GQ Australia's 11 summer beers to sink into this holiday season. "Showing that not all modern-day sours have to approach Mega Warhead status, some breweries are opting instead to highlight the sweeter flavours that brewing fruit-flavoured beer can bring. Take, for instance, Slow Lane, who have created a thoroughly moorish sour with their Apricot Botany Weisse."



16.01.2022 Old Russet is a mixed fermentation sour ale that spent over six months in wine barrels. It achieves its acidity through the use of Pediococcus (Pedio) lactic acid bacteria. Pedio is one of two types of lactic acid bacteria used in sour beer production, the other more commonly used one being Lactobacillus (Lacto). Pedio is known to produce a more complex beer than Lacto, however it needs more time to achieve this. #mixedfermentation #sourale #barrelaged

12.01.2022 We are super chuffed that Botany Weisse won Champion Mixed Culture Beer at the Independent Brewers Association Independent Beer Awards Australia last night! It’s such an honour, especially as a new brewery still finding our feet. Also great timing as we just canned our latest batch of Botany Weisse last week. This batch we brewed back in July and has been conditioning in the tank with Brettanomyces over the last few months. We’ll be releasing it within the next couple of weeks once it’s finished can conditioning. Stayed tuned!

01.01.2022 Botany Weisse Apricot Mixed Fermentation Sour Ale, part of our Botany Weisse series. Unlike most modern Berliner Weisse beers, this is not a kettle sour. It underwent a 6 month long fermentation with Lactobacillus and Brettanomyces, including 3 months aging on apricot.
