25.01.2022 I had my first date last night... It is a seriously underrated fruit. So here's a delicious Walnut & Date Granola Recipe :... Ingredients 2 cups rolled oats 1 cup walnuts coarsely chopped 3 Pitted Medjool dates coarsely chopped 2 teaspoons of vanilla extract 1 teaspoon ground cinnamon teaspoon salt cup of coconut oil cup Honey (Alternatives: pure maple syrup or agave nectar) Let's get cooking - Preheat your oven to 350 degrees or pop on your air fryer - Mix all your dry ingredient together in a bowl and set aside your dates for serving (optional). - In a small bowl or cup, melt your coconut oil and honey, in the microwave. Once melted pour over you dry ingredients. - Prep your baking tray and pour your mixture evenly. - Pop in the oven for 15minutes and use a spatula to mix the granola around to ensure it evenly crispy and form clusters. (Every oven is slightly different so keep an eye on the granola) - After 30minutes - remove from the oven if nice and golden, allow to cool and then break up your clusters and serve with dates, yogurt and fruit (optional). - Finally - Dig in! 25.01.2022 Apricots (a stone fruit) have beautiful health and nutritional benefits, such as High in antioxidants, hydrating, improves digestion and may improve eye health. Apricots can be eaten on their own or turn into something beautiful like : (, )... 3 lbs apricots 1.4kg 1.5 lbs sugar 700 grams 1/4 cup water if needed A handful of thyme sprigs 4 250-ml jars and lids Hot water bath canner Wash, clean, halve and pit apricots. Sprinkle sugar over fruit and let stand for a minimum of three hours or overnight. Sterilize jars in a hot water bath. Add mixture to a flat bottomed pan or pot; if there is not enough liquid to cover fruit, add water. Add thyme. Bring to a boil and cook steadily about 30 minutes, stirring occasionally, until jam is thick and clear. Ladle jam into sterilized jars, leaving only a 1/2-inch of headspace. Seal with sterilized lids, and process for an additional 10 minutes. Let jars rest on the counter, untouched, overnight, to ensure they have sealed properly (the indent in the middle of the lids should pop inward). However, among our craziest of schedules, it is imperative to set aside the time for rest and allow your body and mind to recharge.
