25.01.2022 Beetroot and apple chia pudding, soooo delish . This is what I ordered for brekky yesterday, it wasn't what I felt like having the most (there were eggs and sourdough calling my name) but it's what I felt my body needed.... something fresh with good fibre and "vitality". I often regard eating out as an opportunity to order something that I feel my body needs rather than something I'm craving. Cravings can be driven by need but usually they are driven by deeper forces within... our biochemistry that aren't always beneficial! For example, some weeks I don't cook much fish at home, so I'll order fish. If I've been feeling a bit lethargic and haven't had much red meat recently I'll order a good quality piece of steak. If my veg intake hasn't been optimal that day or the last few days I'll order a vegetarian dish or extra veggies on the side. At pub meals when given a choice of salad or veg with chips, l often ask for salad AND veg, no chips (the request does confuse some places). Eating out is convenient, social, a chance to eat old favourites or try new flavours. It can also be an opportunity to tune into what your body needs without then having the task (hassle) of making it. The other great thing about choosing what your body needs is that you usually feel great afterwards, like you've done yourself a favour! Give it a go next time you're out. 23.01.2022 Banana class today! The kids make a fruit platter and arrange it as a or picture or pattern, these were my 3 fav's . All our classes are lots of fun but I particularly love this one as the kids get so creative with their presentation and then at the end most of them gobble it up on the spot . We always talk about what's a fruit and what's a veg and when I asked the kids today if banana really is a fruit, one girl put her hand up and matter o' factly told me "no, it's a vr...oot" . She explained that the Macquarie dictionary definition of fruit says that it must have seeds but bananas do not and so it is a cross between a veg and a fruit! After appluading her word inventiveness I explained that bananas do have seeds, in fact, in some parts of the world they are really big seeds but in Australia we mostly eat the Cavendish variety which has been bred specifically to have very few teeny tiny seeds. That's one of my many banana fun facts . 22.01.2022 Brussels sprouts! I don't think there is a more devisive vegetable, many people strongly dislike them but when I brought these vibrant green babies to the table this week I heard the words... "mmm yum , brussels sprouts!". Yes, I did cheat a little to get this reaction , the brussels sprouts were quickly fried in a knob of (organic) butter with (sodium nitrate-free) bacon . Now I know bacon is a processed meat and therefore deemed carcinogenic by WHO but consuming it in... moderation, ie: no more than once a week is probably OK, and I think using it to make brussels sprouts sexier is downright genius! (BTW, I didn't come up with the idea) Some veggies need a little oophm to raise their profile and bring down the "ewww" wall. Brussels sprouts are a nutritional powerhouse and overcooking them is what leads to the heavy sulphurous taste that many associate with them. This pic has no filter, I like my sprouts a vibrant green. 21.01.2022 There is no excuse for microwave popcorn EVER! Popcorn is the easiest snack .... get a big pot, a glob of coconut oil, lots of corn kernels and pop away - better to leave the lid on . Like flavour? My kids are salty buttery kinda people so I add salt and butter...... no colour or "natural flavour" required. Do you prefer sweet? Then try a drizzle of maple syrup. . . I don't own a microwave, it broke many years ago, I didn't replace it and to be honest, I have never missed it...! 19.01.2022 "out of the ordinary" - we seem to have lost conscious focus on this part of the definition of treat and instead focus on the "giving great pleasure" bit! . . Putting a treat in a lunchbox everyday (including "healthier" treats), serving a treat after school everyday, giving out treats after every sports game or buying a treat everytime you take the kids to the shops....... the treat ceases to be a treat, it becomes the norm, the ordinary, the everyday food ..... and it becom...es expected. . . I don't like to use the word treat when it comes to food because I think we loose perspective on what we are buying, eating and serving. By calling any food a treat, in our heads we make it ok to eat because we subconsciously think it is out of the ordinary when in fact it may have become the norm, we might even eat it or serve it every single day. 17.01.2022 This article contains excellent advice on packing healthier kids lunchboxes and how to power our kids' brains and bodies to get the most out of their school day. The start of the school year is a great time to introduce a change with your kids...... start small, don't give up if it's not well received initially, talk with your kids about any changes you're making and why, involve your kids in becoming "food detectives" by reading the ingredients lists on packaged food. My goal this year is to get my kids making/ packing their own lunches at least 2 days a week.

13.01.2022 Made lemon meringue pie for Mr 13's birthday cake today, . This was after he had KFC for the first time for lunch - his request. I'm no longer a believer in complete restriction of crap food especially as the kids get older - that said I won't be buying it again in a hurry!! He's a kid who can be sensitive to additives in food so it was interesting to hear his observations of how the food affected him..... he felt tired and grumpy. He also didn't gorge on it like I thought ...he might, he reached his limit pretty quickly. 13.01.2022 Raw cauliflower salad this arvo with the kids. The end result was delicious . None had ever tried raw cauliflower before, a few discovered they quite like it..... If you've never tried, please do, it's one my absolute favs! There was also cumin, mustard powder and cranberries ... all new to most of the kids. As well as tasting, it's important to engage all the senses when trying new foods.... the smell of the cumin was popular, as was the look of the cranberries and colour o...f the mustard powder. One child who didn't want to taste the cauliflower was intrigued by its texture. Positive fresh food experiences are about so much more than just eating the end product. 13.01.2022 Herbs - nature's "Natural Flavour" I love being able to pop out to the garden and cut my own. Herbs are the easiest thing to grow, there really is no excuse not to be growing at least a few. Parsley, rosemary, sage, oregano and thyme are great starters and can withstand a reasonable amount of neglect. If you don't have a garden, a balcony or any window sill in the house will do, just remember that in pots they will need watering!! A fun one for the kids is Stevia, my kids call it the lolly plant and add crushed leaves to glasses of water for a sweet zing. 12.01.2022 Last week I returned from 9 days trekking along the Kokoda track - it was possibly THE best travel experience i've ever had. Ahhhmazing!! Here I have tried to recreate a snack our local chef made us for lunch a couple of times. I'm calling them "Kokoda Wraps". The kids thought they were delish . . . 1. Make a simple dough (2 cups of flour, 50g melted butter, 185 ml milk, pinch of salt), kneed a little, rest 30mins 2. Roll out golf ball-ish sized blobs of the dough, super... thin 3. Add fillings and then roll up, folding in the sides as you go. The authentic Kokoda filling was 2min noodles, canned tuna and cheese, I used rice vermicelli noodles in these ones. You could add some veg or chicken or tofu. Mr. 12 wants me to make some with chicken and haloumi, mmmm. 4. Shallow fry in wok, rotating often so they cook evenly 5. Serve hot or cold . . Food on the track was much like life on the track - simple! Porridge for brekky. Cheese, dry biscuits, noodles, tuna or cuppa soup for lunch and dinner was either a pasta or rice dish. There was pizza one night, banana pancakes a couple of mornings and even homemade banana donuts! There were lots of Arnott's biscuits which I haven't eaten in years but didn't knock back, trekking was hungry work. . . Fresh food wise there were the sweetest most perfect pineapples, bananas, cucumbers, bush tomatoes, avocados (biggest I've ever seen!) and peanuts being sold at some villages. The staple food of the villages was white sweet potato and the leafy green added to our dishes was choko vine, a weed introduced to PNG during the war. . . 11.01.2022 The post trick or treat lolly sort and swap!! I was super impressed this morning when I came out to the kitchen to find Miss 10 and Mr 12 sorting their loot into piles: acceptable, questionable and no way jose!! Ready for us to review, check additive numbers and determine what belonged in the complete and utter no good crap bowl. The acceptable pile is generally chocolate. Questionables might have natural colours. No ways are the ones containing the bright artifical c...olours that send my sensitive/over-reactive/always moving/often anxious 12yo into a tail spin. Lollypops also fall in this category due to teeth damage caused by the pooling of sugar in the mouth, that said, a couple were allowed through the keeper with reminders to thoroughly rinse with water after eating. . Replacements are always reasonably plainish chocolate. No goods go straight to the outside bin. Yes, this is wasteful but it's how we roll. . Now the kids get to practice restraint and portion control for the next few weeks in my head but realistically the next few days . So convenient and saves time which is why my hubby bought some today but all is not as it seems, it does not contain only cheese, it also contains anti-caking agent and preservative . Does this really matter?? Well the anti-caking agent is often made from wood pulp or cotton linters, stuff I wouldn't normally chose to eat! Excess consumption may cause bloating, constipation and diarrhoea. And it's prohibited in food for infants but the packe...t of cheese doesn't tell you it's not suitable for infants! And preservative #200, derived from petroleum (also prohibited in foods for infants) may cause allergic reactions, behavioural problems, skin reactions or asthma in some people. Grating cheese isn't that hard to do, choose the block over the pre-shredded bag. 10.01.2022 Meat prep for 4 dinners done in under 20mins Tangy Lemon chicken Herby spiced pork cutlets . . . Marinated meats from the supermarket and the butcher are very convenient but they tend to have lots of sugar, thickeners, stabilisers, preservatives, "flavours", flavour enhancers, poor quality oil and more salt than you would use in a home made marinade. . .... Always read your labels at the supermarket and at the butcher, don't assume that just because it's a "good quality butcher" that they make their own marinade, few do! Ask to see the label of the packet marinade they use. . . And prep in double or triple batches, freezing the extra. 10.01.2022 More Kokoda inspo for arvo tea today.... banana donuts! I have to confess I did healthify these though ; mine were baked not fried and no 100s and 1000s, just a dusting of icing sugar instead. One minute there were 12, and the next they were nearly gone . Served fresh from the oven, they were a delish hit. They took (literally) 5 mins to prep and a few mins to get into the moulds, 12 mins to cook - too easy!! . . Recipe: 1 3/4 cups flour, 1 1/2 tsp baking powder, 1/4 tsp b...aking soda, 1/4 salt, 1/2 cup sugar, 2 eggs, 1/2tsp vanilla paste, 2tbs milk, 1cup mashed banana (approx 3 ), 1/4 cup olive oil. Mix wet with dry, fill moulds, cook 12-14mins at 180/350, dust with icing sugar, eat warm . . . A few notes: i didn't stress about reducing the added sugar, they are still a million times better than store bought donuts which have more sugar, salt, unhealthy fats and a whole lot of other additives. I choose aluminium free baking powder and I prefer organic flours for baking to keep the pesticide glyphosate (roundup) out of my baking. Choosing organic ingredients when baking is an easy win and not too much more $$ when considering how many different things you can make with 1 bag of organic flour and a dozen organic eggs. 09.01.2022 I'm trekking Kokoda in 7 weeks, bit of a latecomer, only signed up 2 weeks ago so first proper training walk this morning - 18kms up Mt Macedon (the "hill" you can see) around and down. This practice was implemented after the 4 classes that we ran at the kinder last year. 08.01.2022 My decision to study nutrition was driven by these 3 humans, who were all under 5 years of age at the time. I thought when I was done studying I'd focus on kids nutrition but the years rolled on, my little kids became bigger kids and my interests within the field of nutrition broadened. Bringing me to this point....... Again driven by my kids, in 2020 I plan to complete my honours by doing a research project focused on adolescent nutrition. Aside from having no idea what chemicals these "flavours" are, one has to wonder what other flavours the humble standard pickle needs .... a flavour to make you come back for more, finish the jar and buy more perhaps.... . (Btw .... 509 is relatively safe calcium chloride, a firming agent presumably added to stop the cucumbers going mushy which can happe...n when the flower/blossom end of the cucumber isn't cut off properly) . . 08.01.2022 I had a great bunch of holiday programme kids for a Broccoli class today , we made raw broccoli salad with a yoghurt dressing. Comments from the kids at the end of the class..... "Excuse me (loudly!), I LOVE this!!" "I'm going to teach my Grandma and Grandpa how to make this." ... One boy told me he learnt that we can combine different textures and flavours to make foods taste different to what we expect. At the start of the class he told me that he absolutely does not like yoghurt but he gave the dressing a taste and was pleasantly surprised to find that he really liked it, the other ingredients had changed it's flavour... I luuurve bread, if I could request my last meal it would be still slightly warm fresh baked sourdough bread slathered with the finest salted organic butter available To produce my own this arvo is a massive personal win ...... that my family loved too. . .... I've experimented a few times in the past but never nailed it. 06.01.2022 Beetroot carrot and ginger soup - so pretty!! Gotta be honest, up until about 2yrs ago I could not get my kids to eat soup at all .... they hated the temperature hotness and "drinking" their meal, there was unbearable complaining all 'round! . But I have persisted.... slowly, over time... I started with chunky soups served luke warm, with well liked ingredients, like bits of pasta! Chicken noodle soup, more chicken and noodles at first, now more broth. Somewhere along the ...line I started blending half the soup and finally all of it. Eventually we have reached this point.... though I still thought it would help to distract them somewhat with a bit of fortune cookie fun... worked a treat, empty bowls, job done. . 06.01.2022 Let us discuss lettuce Little ol' lettuce gets put down a bit in nutrition circles for not being as healthy as it's darker green leafy cousins. But let's look a little closer.... . . Iceberg lettuce from the supermarket is mostly water with a little fibre, which is great in hot weather for topping up hydration and to be honest, most people could do with more fibre in their diets. Cut up wedges of an iceberg for a simple snack, my kids love the refreshing crunch and I'm happ...y for them to munch on these before dinner cause i know it won't fill them up! . . Let your tastebuds guide you as to the nutrient value, those slightly bitter lettuces are more likely to contain good amounts of vitamin K and vitamin A as well small amounts vitamin C and B, calcium and magnesium. The bitter flavour is also a great digestive, helping to get the digestive juices flowing. If you're not sure about the bitter flavour then add a little avocado or use a simple olive oil (best quality you can afford) and lemon (or vinegar) dressing to dress it up! The addition of some "healthy fats" also helps your body to absorb vitamins A and K which are fat soluble vitamins. . . Red in vegetables always gives an extra dose of phytochemicals so red leaf lettuces are a great add in. Try mixing up a few different types of lettuce. . . Homegrown lettuces are the best! So easy to grow and if your nurture your soil, then you know your lettuces will be packed with nutrients. 06.01.2022 The post trick or treat lolly sort and swap!! I was super impressed this morning when I came out to the kitchen to find Miss 10 and Mr 12 sorting their loot into piles: acceptable, questionable and no way jose!! Ready for us to review, check additive numbers and determine what belonged in the complete and utter no good crap bowl. The acceptable pile is generally chocolate. Questionables might have natural colours. No ways are the ones containing the bright artifical c...olours that send my sensitive/over-reactive/always moving/often anxious 12yo into a tail spin. Lollypops also fall in this category due to teeth damage caused by the pooling of sugar in the mouth, that said, a couple were allowed through the keeper with reminders to thoroughly rinse with water after eating. . Replacements are always reasonably plainish chocolate. No goods go straight to the outside bin. Yes, this is wasteful but it's how we roll. . Now the kids get to practice restraint and portion control for the next few weeks in my head but realistically the next few days . 04.01.2022 The added sugar content is only half the story of sauces such as these; salt (sodium), colours, flavours, preservatives and artifical sweeteners are the other half of the story. Do you really know what you're eating and feeding your family? Have you considered what effect the ingredients might be having on your health? Do you read the labels on the front and let them guide your choices? No added "this", 50% reduced "that", gluten free, fat free and so on. These "labels" are... marketing gimmicks! If you want to know what's in a product, you need to turn it around and read the ingredients and the nutrition panel. And even then you probably won't know everything that's in it because food companies don't have to list what they use to make their "flavour". (Hint: a "natural" flavour additive sometimes used vanilla, strawberry or raspberry flavours is castoreum which comes from a secretion from the glands of beavers but the label won't tell you that!) Take 5-10mins today and have a good look at the labels in your fridge and cupboard. 02.01.2022 Can you guess what today's hero veg was??? Gloves were offered to the kids but only a few wanted them...... others developed a new beetroot juice hand moisturiser . . I like to encourage kids to use all their senses when learning about new fruit and veg and the sense of touch is super important! 01.01.2022 This is my "secret garden" at the bottom of our backyard. After being completely neglected for over a year (thx to the dumping of a lot of clay soil from the footings for our extension ) I've spent the last 3 days down there tending to my fruit trees, digging clay, mulching and weeding. Such joy Nature is my panacea. Now need some wild flowers, bees and fruit . Also need a plan on how to deal with that pile of clay soil so I can set up wicking beds... Would... love any suggestions....
