22.01.2022 Mangoes are surely one of the best things about summer Mangoes are an important horticulture crop across the tropical and subtropical areas of Australia, where a number of varieties are grown, such as - Kensington, Calypso, Honey Gold, Kent, and the R2E2 which is easily the least charismatic name but we love it for its size and the favourable ratio of flesh vs stone. (super important! ) For a super easy meal grab a roast charcoal chicken and combine it with:... - cooked rice, - toasted shredded coconut, - toasted and chopped peanuts, - lots of chopped fresh mint, coriander, and basil, - chopped spring onion, - finely grated lime zest and lime juice, - a splash of olive oil, - chopped red chilli (optional), - and some fresh diced mango. Fried shallots from the Asian grocery section of the supermarket scattered over the top is a tasty way to finish this off. Dinner is done!

18.01.2022 At SMITHkit we don't think it should be difficult or stressful to eat well...even at Christmas! And we also think one of the best things about Christmas is the baking so here's a super easy sweet treat that's fun to make as a group. 1. Blitz a 750 gram fruit cake into crumbs in a food processor. Tip the crumbs into a bowl. 2. Melt 100 grams of dark chocolate with 40 grams of butter. Add to the cake crumbs and stir to combine. 3. Roll the mix into small balls and place onto ...a lined baking tray. Chill for 1 hour. 4. Melt 150 grams of white chocolate and stir until smooth. 5. Drizzle the chocolate over the truffles then top with your choice of toppingsuch as sliced glace cherries, edible silver balls, sea salt flakes, even edible glitter. 06.01.2022 Today is International Day of People with Disability, a United Nations sanctioned day celebrated throughout the world on December 3 each year. Its a day where the focus is to increase awareness, understanding and acceptance of people with disability and to celebrate their abilities and achievements. The IDPwD website provides background information and resources about the day. They also have an events calendar outlining events registered by schools, businesses and community groups specifically in celebration of the day.
