22.01.2022 What is everyone up to today? This morning I did a 20km bike ride and walked my dog (Gus). Im now in the kitchen cooking breakfast muffins. (pictures later with recipe) This afternoon im off to school to help Ash and Liz finish there observations for their Cert 4. Then im back into the kitchen. Im loving cooking these tasty recipes.



20.01.2022 Blueberry and Cinnamon Muffins 2 1/2 cups Almond flour 1 tbs Coconut flour 1/4 tsp salt (I dont use this much)... 1/2 tsp baking soda 1 tbs Vanilla 1/4 cup Coconut oil 1/4 cup Maple syrup 1/4 Coconut milk (full fat) 2 Eggs 1 cup Blueberries (fresh or frozen) 2 tbs Cinnamon - Pre heat your oven to 180'degrees. - Line a 12 pan muffin tin with pans. - Combine almond flour, coconut flour, salt, baking soda, cinnamon and stir. - Pour in melted coconut oil, eggs, maple syrup, coconut milk, vanilla and mix well. - Fold in blueberries. - Bake for 22-25 mins. - Allow to cool if you can This was my mid morning snack

19.01.2022 TGIPaleo Bread 1/2 cup Coconut flour 1/2 cup ground Flax seed 1/2 cup Arrowroot flour... 1 1/2 tsp baking soda Sprinkle of Pink salt 6 whole Eggs 1/2 cup Apple sauce 1 tbs Apple cider vinegar INSTRUCTIONS Pre heat oven to 180'degrees. Whisk together all the dry ingredients. Add the eggs and apple sauce and combine well - no lumps. Let the batter sit for 5 mins. Stir in the apple cider vinegar. Pour the batter into a loaf tin, lined with baking paper. After cooking for 45mins check to see if cooked.

16.01.2022 Tonights dinner, Cauliflower and bacon soup with Olive bread. Delish....



02.01.2022 Olive Egg Loaf 1 cup Almond flour 1/2 cup Coconut flour, sifted 4 tbs Psyllium husks... 2 tsp Baking powder 1 tbs Raw Apple cider vinegar 1 tbs dried Mix Herbs 8 free range Eggs 4 tbs Cold pressed Virgin Olive Oil 10 Kalamata Olives chopped Himalayan Salt and fresh Cracked Pepper - Pre heat oven to 120'degrees. Combine all of the dry ingredients then add the beaten egg, apple cider vinegar, olive oil and olives and stir well to combine. Scoop the mixture into a lined bread tin and spread evenly to all four corners. Bake for 80 mins, remove from the tin and allow to cool alittle. Then slice. FOOT NOTE I found that after backing time was completed it wasnt brown enough for my liking so I turned up the temperature to 150 ' degree till it was browned.
