For a quick and easy kick of veg, add leafy greens such as spinach or kale to your smoothie. If you have a bit more time up your sleeve, adding in pre-cooked and frozen vegetables to your smoothies, such as pumpkin, sweet potato or cauliflower, will make your smoothies extra thick!! 2. Tuck them into your favourite meals: Vegetables can be added into many different meals, including popular meals such as pasta, pizza and rice dishes For instance, you could chuck some broccoli into your next spaghetti bolognese or you could add in some slices of grilled eggplant and zucchini into your next lasagne. 3. Salad doesn’t have to be boring: Salad is such a versatile meal or snack option and they can be made with so many different ingredients. Don’t be scared to get creative with your salads Opt for ingredients that you love to make your salads more exciting, enjoyable and flavoursome! You may like to make room for one big, vegetable loaded salad every day or opt for a side salad with every meal. 4: Snack on veg: When we think of snacking, vegetables aren’t always the first thing to come to mind but that doesn’t mean that they don’t make incredible snacks! Some vegetable based snack ideas include zucchini slice, carrot and cucumber sticks, cherry tomatoes (whole or seasoned), vegetable chips (we opt for @nudusfood) or rice cakes with sliced tomato and pepper. 5. Homemade veggie chips: Make your own vegetable chips in just a few steps! Choose your fave vegetables (I personally love sweet potato), wash, peel and thinly slice your vegetable of choice, pop it all into an oven pan, season with salt, pepper and olive oil and bake until crisp.
