Dietary Info: Glúten Free Nutritional Information Calories: 520.20 Kilojoules: 2177.50 Protein: 35.80 Carbs: 57.80 Fat: 13.00 Sugar: 19.60 Ingredients 480 g Extra Lean Beef Mince 3 medium Sweet Potato 2 cup Cooked Brown Rice 180 g Cheddar Cheese 8 cup Baby Spinach 3 cup Sliced Mushrooms 3 medium Onion 1 large Carrot 2 tbsp Taco Seasoning Method Step 1 Pre-heat the oven to 180C / 360F. Step 2 Take the sweet potatoes and cut to open them. Step 3 Place on a lined baking tray and in the oven for 20-30 minutes, until roasted to your liking. Step 4 Cook the rice according to packet instructions. Step 5 Dice the onions and grate the carrot. Step 6 Place a non-stick pan on a medium heat. Add the onions and cook until translucent. Step 7 Add the mince to the pan and break it up using a wooden spoon. Cook for 6-7 minutes. Step 8 Add the carrot, sliced mushrooms, and the taco seasoning, along with a dash of water if needed. Stir to combine and continue to cook until cooked through. Step 9 Add the rice and cheese, and stir again to combine, then remove from the heat. Step 10 Take 6 plates and lay spinach on each one, then add a sweet potato to each. Step 11 Top with the taco mince, then dig in!
