Lemon butter Tea Cake ... Ingredients: 65g butter, softened cup caster sugar 1 egg 2 tsp vanilla extract 1 cup self-raising flour cup low fat milk 2 tbsp lemon butter and 2 lemon butter extra Topping Ingredients: 10g melted butter 2 tsp caster sugar Method: 1. Preheat oven to 180/160C fan forced oven. Line 12 hole mini muffin pan with paper cases. 2. Using an electric beater, beat butter, sugar and vanilla together until pale and creamy. Then add on in egg and beat until combined. Stir in half the flour, then half the milk. Repeat with remaining flour and milk, adding 2 tbsp lemon butter. Spoon mixture into prepared cases. Top each with 1tsp of extra lemon butter. 3. Bake for 15 - 18mins or until golden and firm to touch. 4. Brush the hot cakes with butter. Sprinkle with caster sugar. Cool. Serve - - Nutritional information: Energy: 587kj (140cal) Protein: 2.1g Fat: 5.7g Carbohydrate: 19.7g Fibre: 0.5g
