23.01.2022 With Christmas only 4 weeks away - why not add some native Australian ingredients to your Christmas lunch. Ingredients 1.5kg live King Island cray sh or local rock lobster 1/4 cup (60ml) olive oil... 1 cup saltbush leaves or flat-leaf parsley leaves Lemon wedges and finger lime pearls, to serve Saltbush butter 150g unsalted butter, softened 2 tbs finely chopped saltbush leaves or flat-leaf parsley leaves 1 small red chilli, seeds removed, finely chopped 4 garlic cloves, crushed Finely grated zest of 1 lemon Method 1.For the saltbush butter, combine all the ingredients in a bowl. Season with salt and pepper, then chill until needed. 2.Place crayfish in the freezer for 2 hours (this will put it to sleep). Place on its back on a flat, non-slip work surface with claws tied to clearly expose the under surface. 3.Place a sharp knife on the head beneath the mouth parts. Cut through the head, then backwards towards the tail. Open out to reveal the 2 parts. 4.Remove and discard the dark intestinal vein, stomach sac and gills. Crack claws slightly in half crossways with a cleaver. 5.Transfer crayfish, flesh-side up, to a baking tray and drizzle with oil. Heat a chargrill pan over high heat and add the crayfish, flesh-side down. Cook for 4 minutes or until slightly charred. 6.Turn, then, using a spoon, spread flesh with the saltbush butter. Cook for a further 8-10 minutes until the cray fish is just cooked through. Add saltbush leaves to the chargrill for the final 5 minutes of cooking to char slightly. 7.Serve the crayfish hot, scattered with charred salt bush leaves, lemon wedges and finger lime pearls. #cookingwithsomethingwild See more

06.01.2022 Perfect weekend cooking! Lemon Myrtle Emu with Emu Floss and Bush Tomato Chutney ingredients;... Emu 2 350g emu fillets, trimmed, trimmings reserved 10 lemon myrtle leaves, finely chopped 2 tbsp grapeseed oil salt and pepper, to taste Emu floss 500ml grapeseed oil emu fillet trimmings, from above salt and pepper, to taste Chutney 100g bush tomatoes 2 tbsp grapeseed oil 300ml water 2 tbsp caster sugar 3 tbsp white vinegar salt and pepper, to taste Preheat oven to 180C. 1/For the emu fillet, season well and rub the lemon myrtle into the meat. Set aside to marinate for 30 minutes. Heat oil in a pan and sear the emu on both sides. Transfer the fillet to the oven and cook until medium, about 5 minutes. Remove from oven, cover and set aside to rest 2/To prepare the emu floss, place 1 tbsp oil in a pan and set over high heat. Sear the meat in the hot pan until caramelised. Remove from heat and shred the meat to make long strands. 3/Heat remaining oil to 180C and shallow fry meat strands until crunchy, about 30 seconds. Drain, season and set aside on paper towel. 4/For the chutney, toss bush tomatoes in a small pan with oil until tomatoes have blistered. Add water and simmer uncovered until tender. Add sugar and vinegar and simmer until reduced and season to taste. When tomatoes have softened, remove from heat, set aside. 5/For the macadamia crumb, toast nuts in the oven until golden and transfer to a food processor. Pulse the machine until the nuts resemble a chunky crumb texture, set aside. 6/To assemble, slice emu into 1cm slices and place on a plate. Sprinkle macadamia crumble over the emu and around the plate. Drizzle chutney around the plate and garnish with emu floss and lemon myrtle flowers. 06.01.2022 Aussie Christmas classic with a twist! Lemon myrtle pavlova Ingredients... 2 tbs corn flour, sifted 1 1/2 cups (330g) caster sugar 1/2 tsp ground lemon myrtle 1 vanilla bean, split, seeds scraped 6 eggwhites, at room temperature 1/2 tsp cream of tartar 1 tsp white vinegar 300ml thickened cream, whisked to soft peaks Thinly sliced mango, roasted chopped macadamias and finger limes (from specialty grocers), to serve 1. Preheat oven to 150C. Grease and line a large baking tray with baking paper. Lightly dust prepared tray with 1 tbs cornflour. 2. Place sugar, lemon myrtle and vanilla seeds in a food processor and whiz until fine. Sift through a fine sieve into a bowl. Place the eggwhites and cream of tartar in an electric mixer fitted with the whisk attachment and whisk to soft peaks. 3. With the motor running, add 1 tbs sugar mixture every 30 seconds, whisking until well incorporated. Continue to whisk for a further 5 minutes or until thick and glossy. Gently fold through the vinegar and the remaining 1 tbs corn flour, then spread meringue onto prepared tray into a 22cm-diameter round. Using a palette knife, spread the sides upwards to make a slightly higher edge and a lower centre to create a well for the topping. 4. Place pavlova in oven, then immediately reduce oven temperature to 100C. Bake for 1 1/2 hours or until dry and crisp. Turn off oven and cool with the door ajar for at least 2 hours. 5. Dollop over the whipped cream and top with the mango slices and macadamias. Squeeze over finger lime pearls to serve. Recipe by: Elena Duggan #cookingwithsomethingwild

BBQ kangaroo steak sandwich with caramelised onions Ingredients..... 4 marinated kangaroo steaks Olive oil spray cup Egg mayonnaise 2 tsp Grainy mustard 1 tbsp Chopped parsley 8 thin slices of multigrain sourdough bread, lightly toasted 2 Ttomatoes, sliced 1 cup Baby rocket leaves Caramelised onions 2 tsp Olive oil 2 Brown onions, peeled and finely sliced cup pale ale (see Note) 2 tbsp dark brown sugar 4 sprigs lemon thyme Salt flakes and freshly ground black pepper Instructions... For the caramelised onions, heat olive oil in a medium saucepan over a low heat. Add onions, cover and cook for 10 minutes or until soft. Increase heat to medium-high, add ale and reduce by half. Add sugar, stirring until dissolved, cook for 3 minutes or until mixture becomes syrupy. Remove from heat, add thyme leaves, salt and pepper, stirring to combine. Set aside until required. For the mustard mayonnaise, combine mayonnaise, mustard and parsley together in a small mixing bowl, stirring to combine. Set aside until required. For the steaks, heat a barbecue on medium-high. Lightly spray steaks on both sides, place on preheated barbecue grill and cook for 3-4 minutes each side (depending on the thickness), for medium rare. Remove from heat onto a plate, cover with foil and rest for 5 minutes. Slice each steak. To assemble steak sandwiches, spread mustard mayonnaise over 4 lightly toasted pieces of sourdough bread. Place sliced steak on top, followed by Pale Ale caramelised onions, sliced tomato and baby rocket. Finish with remaining slice of toasted bread.
