10.01.2022 Hi all, I just wanted to share my favourite honey coffee energy ball recipe with you all. And best of all its gluten and sugar free. Simply mix all the ingredients together then roll in coconut and store in the fridge. If the mixture is a bit wet to begin with just leave it for half an hour to stiffen up before rolling in coconut.... Ingredients: 200g almond meal 100g coconut flour 400g Honey 2 table spoons of chia seeds 2 table spoons of Cacao nibs 1 shot of fresh coffee 30ml 1 cup of shredded coconut 1 cup of chopped walnuts 1 cup of chopped cashews Then simply roll in desiccated coconut. If coffee isnt your thing the you can use either lemon rind and juice or orange rind and juice. Enjoy

05.01.2022 Found a way of putting a bit of goodness into this old classic Coconut Ice 250g honey 250g icing sugar, sifted, plus extra for dusting... 200g dessicated coconut Using a wooden spoon, mix together the honey and icing sugar in a large bowl. It will get very stiff. Work the coconut into the mix until its well combined use your hands, if you like. Split the mix into two and knead a very small amount of food colouring into one half. Dust a board with icing sugar, then shape each half into a smooth rectangle and place one on top of the other. Roll with a rolling pin, re-shaping with your hands every couple of rolls, until you have a rectangle of two-tone coconut ice about 3cm thick. Transfer to a plate or board and leave uncovered for at least 3 hrs or ideally overnight to set. Cut into squares with a sharp knife and pack into bags or boxes. These will keep for up to a month at least, if stored in an airtight container.
